  1. People say #brewing #alcohol is hard.
    As someone who brews alcohol (Legal where i live to do so), i do agree.
    Its so hard waiting for it to ferment, so you can enjoy a cold one with the boys!
    Everytime i get home from work, i have to suffer smelling the progress i am making.

  7. Mead status: Spiced pomegranate mead is at 1.030, started at 1.110. Fermentation has slowed so probably about a week left for primary. After which I'll rack, stabilize, and add the spices.

    Started a batch of pineapple coconut (Pina colada) today with 2.5lbs of honey, 10oz of coconut syrup from Hawaii, and 1lb of frozen pineapple. OG is 1.110, again aiming for about 1.015 for an off-dry/semi-sweet mead. I'll add a little lime zest in secondary.

  8. To split up the mundane task of sterilising and bottling my Merlot, I turned bottling day into #brewday :) A local #mead made with honey from Winterton, and a Nutmeg and Ginger #wine for no apparent reason.
    Temp too high at the moment to pitch the yeast so i'm waiting an hour.

  12. The blackberry melomel (mead) is bottled! About 22.6 liters or so total. ;)

    Sipping on a glass of dregs from the fill hose and it even tastes great. Alcohol presence that will mellow, fruity from the berries and floral from the honey. I'm very happy with the results.

    12 bombers with crown caps for long term aging (maybe;), 12 liters, 4 pints.

    50 days start to finish.

  13. Racked the blackberry melomel (mead) again.

    it's been done fermenting for a week or more, been letting clear up a little. FG around 1.002. Degassed and potassium sorbate added. I'll back sweeten it with 2 lbs (900g) honey tomorrow plus chitosan and let it clear up. The honey is July 2024 vintage that did not crystalize.

    It tastes good, very floral.

  16. Did not hit 50%, not self sustaining. Warmed slightly a la flambe, though, it is ***way*** more flammable than before (put a tiny bit in a pan over a low burner and the subsequent ignition was a "whoom!" 😬 But followed shortly by a cloud of fabulously pleasant smelling, sweet smoke. Did not lose my eyebrows!). Putting this stuff in one of those warming "air freshener" devices could be nice, LOL. Shortly after, a bee flying by came around to figure out what the smell was, lol. #mead #flambe

  17. I racked the blackberry melomel (mead) into a carboy. Since the fruit was in a bag this process just removes seeds which were the only thing left in the bag. I topped it up with 1 cup of water, 15 grams of bentonite, and less than 100 grams of honey. The top of the carboy volume is always deceiving.

  18. Bottled honey wine today. 25 750ml bottles, and 2 1.5 liter bottles.

    Grapes from the 100 year old vine. Honey from the bees. 5 gallons from the grapes and 5.5 lbs of honey plus water to top it up and another 1.7 lbs of honey to back sweeten it.

    It tastes pretty good actually, not dry and not sweet.

  24. Is it sufficient to hashtag posts involving or mentioning alcohol, or is a CW necessary? (recovering alcoholics have mentioned to me it's helpful to flag these, hoping the hashtag is enough). I know with Mastodon you can set up many keywords and never see any posts mentioning alcohol, and would like to respect folks efforts there without making the posts impossible to see.

  25. Whew! that was an experience I'd like to not repeat.

    Sitting on the couch jamming to Trampsta, when he let drop one of *those* bass beats, where you feel like the entire universe is throbbing along with him, and B0000M! goes a mead bottle!

    That fucker exploded and blew most of 750ml of mead into a fine peach mist that still hasn't settled out of the air, and glass all over that quarter of the house (open plan kitchen/living room). I think I still haven't seen the EZ-Cap bottle top.

    There were four other bottles from the same vintage that I quickly opened, and each yielded the now expected fountain of peach mead. I managed to save enough from those bottles to make up another bottle and a half.

    The peaches had been bought fresh at the farmers market this spring, were absolutely glorious, and when we ate some the missus insisted we go back and get more so I could use them in a batch of mead.

    I really don't understand how this happened, that mead had been let to sit in the fermenter for a week without making bubble one, after which I stirred air into it vigorously and allowed it to sit another week without it budging.

    I've burped those bottles twice since I bottled, and they just burped - there was no indication of a pending rupture.

  26. Started a blackberry melomel (mead) today. 12 lbs / 5.5 kg blackberries, 9 lbs / 4 kg July honey, and Lalvin 71B yeast.

    I put a little sugar on top of the blackberries as they thawed along with some pectic enzyme. Mashed good, 2 days from frozen to fermenter. The juice was about 14 brix or 1.057 SG.

    Put all the berries in a brew bag, added a big heavy glass mug for weight, diluted the honey, rehydrated the yeast, and done. OG was 1.060.

  27. What can you do with an excess of honey? Our adult kids gave us a mead making kit, and after a few months of fermentation it’s time for bottling. I added a little cinnamon to the three on the right. Recipe says to wait 3-6 more months, or a year if I can stand it. #mead #homebrew

  28. My pumpkin mead had mostly stopped bubbling so I checked the gravity and it's at 1.000 for roughly a 14% ABV. I racked it into a new container and added the pumpkin pie spices. Secondary fermentation should take about a week with taste tests at 3 and 5 days. Then I'll cold crash it for a couple of days to drop the spice particles, then stabilize and back sweeten if needed.

I racked the wine again yesterday which was day 61, it hasn't cleared up any with time and probably hasn't been fermenting much for a couple of weeks but had enough bubble to make starsan bubbles in the airlock. I added sorbate, degassed it, and today I back sweetened it with 766 grams of pasteurized honey in water that made about a liter total and filled the carboy up to the neck. Added chitosan and maybe it will clear up. Tastes like wine.

  31. October Surprise Mead!

    I got a new glass fermenter this weekend for making the meads.

    I've just gotten started on a one gallon batch of blueberry/raspberry, and a gal of peach is not far behind.

    I'll add the pictures I've taken so far, and caption them and provide some context once I have pitched the yeast tomorrow.

    I'll curate the original post for completeness and accuracy, meanwhile y'all can yack at me in the comments with questions and observations.

    BTW This mead will have a roughly 18-20% ABV. It is technically classified according to ABV and production method as a 'desert wine'. It has about the same mental effect as a strong (40 proof) liquer.

    Aclinically speaking, it is an ass kicker.

    I wanted to talk about #Mead a while back, and so first I talked about the history of mead, and the impact it had on Rus culture, and paved the way for the impact of #vodka on Rus society.

    This led me down a path of self reflection, and an examination of the impacts of alcohol on my own culture, and my family and community.

    So I spent a month or two reflecting, before posting about mead as a consumer and a zymurgist.

    I hope that it has tempered a little my enthusiasm, but to be fair, I rather doubt it.

    So with all that out of the way, let us examine mead as I have enjoyed it in my time.

    Zymurgy, if you don't know, is the craft of making fermented beverages. I have made Beers, Ales, Wines, and Ciders; I have an interest in making liqours as well, but I have never really gone there. Yet.

    Anyway, mead.

    Made and served right (the way I like it lol) it is the adult nectar of legend. It will seem like sweet liquid silver on the tongue, divinity in the head and hell and murder in the morning if you get in over your limit.
