Trimmed my lemon balm bush. What should I do with all of the leaves?

I have for the past few weeks been picking of the medium sized leaves to dry and store. But I've only desided to trimm the stalks today so I have loads.

Has anyone used lemonbalm in cooking before?

I am currently making syrup out of some.

Propagating a cactus which I've forgotten thw name of. Its growing pretty steady, nice growth and roots.

I brought this one a while back and separated some of them to grow in different pots. Super easy to propogate too as you can essentially just detach a node (?) And plant it.

Some grow little spiky bits that fall off and grow too (which is what could be growin on the small one).

I propogated this plant a while ago, I think it died and then gradually grew back. I got it from my Grandma's larger plant.

Its so cool (idk the name tho), it grows it's babys on the edges of it's leaves and when they get big enough they drop off. It you have a really big plant there are many babies, kinda cool.

This lil one fell off outside the pot and I only just found it XD

I repotted this spider plant today it has such thick roots and was all spilling out the bottom.

It has had several babies which are growing pretty good.
