I came across Rick Martinez's Instagram and all the recipes he generously shares and had to make Shrimp Tostadas with Herbed Mojo de Ajo Slaw. It's SO fresh and delightful!

Of course I used prawns because Australia. And I used jalapenos for everything because Australia. Then I put crumbled feta on top because I thought it'd be nice with the saltiness and I was right! Also my herbs are weird ratios because caterpillars ate all my plants.

A lime crema on top might be v good too!

I spent an hour rushing around, sweating my box off, making beef tacos and I was looking forward to eating a couple but as I sat down to eat them my stomach turned and I lost my hunger. 😖
