Out on a walky errand and ensured we diverted slightly to the "Spice Divine" grocery and restaurant, purveyors of a nice masala chai.
Got a couple of those to bring home with us and it's a tasty treat.

Husband gave me a beautiful marble mortar and pestle for Christmas!
Made my first masala chai from a Nik Sharma recipe today. I left out a clove and doubled the milk, it is good, but I think it could be better. The flavour was really improved by just a little sugar.
The next experiment will add nutmeg and some garam masala from Penzey's.

CW: Attempting to make a masala chai simple syrup
First attempt at making a Masala #Chai simple syrup has been decent.
I do think it needs quite a bit more ginger (perhaps I should grate some instead of slicing it), and get some better cinnamon sticks. Should also look into if there is much of a difference between using cardamom pods, or just the dried seeds from them (which I used).
Definitely need to up the spice to water ratio too, or let it infuse for longer.
Using muscovado along with regular sugar gives an interesting extra depth, but may also have made it too sweet. (Though amping up the spices in general might help with that too, as I would need to add less of the #SimpleSyrup to my freshly brewed #tea.)#FiXatoFood #FiXatoCreative #FiXatoExperiments

Making payment on the office space I only visit once a month by feeding my coworkers hot caffeinated beverages when I do make it in. This month was a pot of nice, spicy chai.
