#introduction - Hi! I'm Matt. I hate writing introductions! Long time computer geek. Adopter of a #LowCarbLife since the end of 2021. I really wasn't active on :birdsite: until late 2016, migrated here after Elmo announced his $8chan initiative.

@elpenor I hear you. My switch to #LowCarbLife dropped 35 lbs in under 6 months. My doc had told me to start a statin, but after 5 of the 6 months of weight loss I was retested, and for the first time in over 10 years my total cholesterol was normal. My hdl had gone back to normal after dipping the prior year. Yes I really didn't see how I needed to lose 35, I was in total denial. But telling my doc she never actually prescribed the statin she was asking to stay on was priceless!

Another form of #LowCarbLife breakfast. Sometimes I’m eating a very saucy food and so I just put it in a bowl with extra veggies and the top it with a single two egg omelette. This also works well with chili and cheese.

One of the first foods I added to my #LowCarbLife is pumpkin seeds. Most of what you find come from china. With concerns of lead, I soon switched to a product grown in NY. I believe there is also a Midwest online retailer as well. But I’ve been happy with this one. They use an Australian oil seed variety that doesn’t need to have a shell removed. This variety looks black rather than green. Picture 2 is 1/2 serving with pen included for scale. 5g carb, 10g fat, 4g fiber, 10g protein.

#lowcarblife getting real good at making “egg tortillas”. Pictured is two eggs made into 5 tortillas. Used left over shaved steak, mushrooms, bell peppers and onions, topped with grass fed cheese and some Dijon mustard. Along with green beans, walnuts and strawberries, and my normal low carb blueberry pancake. 25.1g carbs, 44.6g fat, and 32.1g protein.
