Had a block of Walmart Swiss hiding in the fridge, so I made Mini Quiche Lorraine. (Not sure how to correctly pluralize) I haven't made these since my stroke. My coordination felt pretty good today.
I decided to add water to the dough recipe to make it easier to work. Big mistake, the crust is less flaky. So, I made 4 dozen with the botched dough. Some will be frozen for later. I'd forgotten how easily the custard spills over. The oven is a mess.
