#sourdough refreshed. You know this means tomorrow will be #pizza day!
I'm going for a 30 hrs maturation, 60% light flour, 40% rough flour, 65% hydration
Puntata 12 hrs, appretto 18 hrs (give or take)

so, on a whim, i tried my hand at making #bagels from scratch. they're surprisingly easy to make. i mean, i was thoroughly surprised. but then i'm sure that's in large part due to the simplicity of the recipe used as well as the use of the #BreadMaker to do all the mixing, #kneading and even the proofing.
pictured are: garlic powder + salt, poppy seed, sesame seed and shredded #parmesan (which was the best of all of them).
so. damn. good.

So far in these few hours of holidays I refreshed the sourdough, prepared a new batch of pancakes batter with the sourdough exceeds (wife approves) for breakfast tomorrow and went for groceries.
A little work out and then I'm going to sort my STLs for League of Votann. I still need to order the codex, damn. Going to #3dprint some units completely out of the blue.
