Started with ~2070g chicken wings. Made an equilibrium brine of 1% salt and 0.5% sodium phosphates in 1000g of water. Soaked overnight (brining is a *diffusion* process) and had 840g of liquid. Boosted weight of the chicken wings over 9%! Sorry, no pictures. #KitchenMagic #KitchenMath
