    Blitz-Kimchi
    #vegan #vegetarisch #Kimchi

    Das ist natürlich nicht mit fermentiertem Kimchi zu vergleichen, aber für meine Zwecke sollte es gehen.

    #Salat + #Frühlingszwiebel schneiden, #Möhre raspeln. Das Gemüse mit 2 EL Salz verkneten, 30:00 Minuten stehen lassen. Das Gemüse gut abspülen + abtropfen lassen.

    Würzpaste: #Sojasauce #Chili.flocken Zucker #Knoblauch verrühren.

    Das Gemüse mit der Würzpaste verkneten - fertig.

  9. @ai6yr I don’t find gochugaru to be very spicy, similar to paprika. But it adds that perfect flavour to fermented #kimchi. I have a recipe that I’ve shared here and others have successfully prepared.

  10. @ai6yr Perfect, you’re all set, whenever you’re ready to make kimchi. Maybe roast your coffee beans first, but it’s your call! #kimchi is a really fun food project. I make it the easy way, chopping the Napa cabbage into 1 inch chunks before brining for a few hours. Once that’s drained, it’s about a 30-minute job to mix up all the other ingredients and jar your ferment. Save the leftover brine for other #fermentation projects like jalapeños or kosher-style pickles.

  14. **this one is: free beet greens from the farmer's market that would have been thrown in the compost; they are mixed in with the carrot greens that are fed to the rabbits, I intercepted them from the compost pile 🤪 -- mustard weeds harvested from the yard; volunteer arugula; green onions; and (the only purchased item) some garlic, because I do not generally get successful garlic crops.   18. Nice and wilted, tasty as is, ha. I added gojicharu and left it in the brine. Also added some green onion for flavor profile. WIll let it sit for a couple of days, hopefully enough salt to let it do its own thing. Lid is cracked to let the bacteria exhale. #kimchi

  19. Last night I made Korean Soft Tofu and Kimchi Soup (Kimchi Soondubu Jjigae) from J. Kenji Lopez-Alt’s The Wok cookbook.

    We think Megan doesn’t like kimchi or gochujang, and since this was too spicy for the kids, I don’t see myself making this again. I thought it was fine enough.

    I mean, there's plenty of people who adore #durian (not hating on it), and they still get banned from trains. XD

    In the case of #kimchi, it's not at all an acquired taste/smell for me. I literally ate it once and said, "What?! Spicy cabbage cole slaw?!? I LOVE YOU!!!" 😄

  27. After our lengthy threads yesterday about #banchan, #kimchi, and #fermentation, I managed to get 2 styles of cucumbers made. One is 오이무침, seasoned Korean cucumber, and the other is fermenting spicy dill pickles, made with the last of my kimchi brine. Pretty sure I added way too much salt to the first, and too many Alleppo chili flakes to the second, but I'm more likely to eat these than plain old cukes, especially in the quantity I received.
    Today is also meant to be #borscht day, but I'm struggling with vertigo, so I've been watching #kdrama (Sh**ting Stars) instead.

    #Mais etwas zerkleinern, #Zwiebeln anbraten, Mais + #Cumin zugeben.
    Öl in eine Pfanne geben, im Ofen erhitzen. Mehl Eier Milch verrühren. Den Teig in die heiße Pfanne gießen, Maismischung und ger. Käse darauf verteilen. Backen.

    #SalsaRoja: #Chili #Tomaten Olivenöl #Knoblauch Salz pürieren, etwas einkochen.

    Das Gericht mit #Salsa #CremeFraiche saurem Gemüse (hier #MixedPickles, im Original eine Art #Kimchi) + #Limette servieren.
