Hanucah this year begins on 14 December and lasts for eight days. Because the festival commemorates how the oil in the Temple lasted miraculously for eight days, it is customary for Jews to eat fried foods. Ashkenazim indulge in latkes and jam doughnuts, but Sephardim prepare a rich variety of fried foods.
