  1. Conclusion: This is a well-executed #pizza with what I assume to be the limitations of the local supply-chain. I don't think the "issues" are a matter of tailoring it for local tastes.

    I absolutely enjoyed my #JimsPizza, and I will return for more pizzas there.

  2. I'd have liked a bit more sauce to be sure of my assessment, so I may come back to that evaluation. it was OK, but I'd have liked a bit more of the sauce flavor.

    Finally, there is the crust — and again, perfectly cooked.

    I think it's probably not the usual #pizza flour. This was a bit soft and puffier with small air bubbles. Rather like you'd make at home if you didn't get the specialty high gluten flour. Can that be had in Taiwan? Not quite rich in flavor either.

  3. Sauce: My Italian aunt from from 1920s NY City taught me how to make #pizza and pasta sauces, and the key thing I learned is that there's a "moment" when you're adding the sugar when the sauce almost magically switches from tomato-tasting to "sauce" tasting.

    It's up to you where you want to balance that sauce. I like it square on the line: it's lost the flavor of tomato, but it's still a bit tart. #JimsPizza is a little to the left of the line (tomato side) and sparse.

  4. Further thought on the mozzarella — I don't think it was "fresh" mozzarella, but if it was, they don't have the right ovens to cook to temperature needed to use fresh, so... I don't think it's that.

  5. Cheese. Here's where we start getting into the "Taiwan problem." Although, there are a lot more cheese available here than there used to be. This is NOT a cheese-lover's country, and the choices are limited (or expensive.)

    The mozzarella on this pizza was... fine... perhaps it was part part-skim, which accounts for a lack of richness in the flavor and a bit of final consistency that was a bit "soft?" "Thin?" I'm not sure what word I want to use.

  6. Note: This is based on ONE PIE, that's not a great sampling size, and this might not be indicative. This is a first impressions — that I've slept on.

    Looking at the individual components. The pepperoni was... normal! That's a compliment. I've had some pepperonis here that are... oddly sweet, which I think might be tailored locally, since the popular and ubiquitous Taiwanese sausages are a bit sweet.

    These pepperoni were not that, I am love'em for it.

  7. Their online menu is geared towards delivery/takeout and doesn't seem quite the same as the printed menus at the counter, but I couldn't do a side-by-side comparison as they have no menus to take home.

    #Pizza was gorgeous, and absolutely perfectly cooked. They have made the effort, and I will reward them with my repeat (probably frequent) business.

    I enjoyed this pizza, and ate every bite.

    But... there are some issues and I think I blame Taiwan more than #JimsPizza #Hsinchu

  8. My thoughts on #JimsPizza in #Hsinchu. This place gets 100% in vibe and presentation. It feels like a #Pizza shop, and has counter-service for large NY-style slices. They also had slice combo specials with things like wings. Upstairs they have dine-in tables, complete with sports showing on a big-screen TV.

    Pizzas are listed as 12", but apparently they will sell you a 22" pizza, but you have to pick it up, as it's too big for a FoodPanda/UberEats Scooter.

  9. I took notes on this one, but I wanted to sleep on it. I hate hate hate having to include the phrase "for Taiwan" in my thoughts on a #Pizza but, so far, since 1998, I've yet to encounter a pizza that doesn't demand that caveat. Even Domino's and Pizza Hut are... "off" here. For the record: #JimsPizza is the second-best pizza I've had in Taiwan — a little place in Taipei called Little New York (小紐約) has that honor of being best, but even that does require "for Taiwan" appended. #Hsinchu
