"#Jerky is a lightweight, dried meat product that is a handy food for backpackers, campers and outdoor sports enthusiasts. It requires no refrigeration. Jerky can be made from almost any lean meat, including beef, pork, venison or smoked turkey breast. (Raw poultry is generally not recommended for use in making jerky because of the texture and flavor of the finished product.)
Raw meats can be contaminated with microorganisms that cause disease. These harmful bacteria can easily multiply on moist, high protein foods like meat and poultry and can cause illness if the products are not handled correctly. If pork or wild game is used to make jerky, the meat should be treated to kill the trichinella parasite before it is sliced and marinated. This parasite causes the disease trichinosis. To treat the meat, freeze a portion that is 6 inches or less thick at 0ºF or below for at least 30 days. Freezing will not eliminate bacteria from the meat.
Follow these recommendations for safe handling of meat and poultry:
- Always wash hands thoroughly with soap and running water for at least 20 seconds before and after handling raw meats.
- Use clean equipment and utensils.
- Keep meat and poultry refrigerated at 40ºF or below. Use ground beef and poultry within 2 days, red meats within 3 to 5 days or freeze for later use.
- Thaw frozen meat in the refrigerator, not on the kitchen counter.
- Marinate meat in the refrigerator. Do not save and re-use marinade.When preparing jerky from wild game, it is important to remember that the wound location and skill of the hunter can affect the safety of the meat. If the animal is wounded in such a way that the contents of its gut come in contact with the meat or the hunter’s hands while dressing the meat, fecal bacteria can contaminate the meat. It is best to avoid making jerky from this meat and use it only in ways that it will be thoroughly cooked. Deer carcasses should be rapidly chilled to avoid bacterial growth. The risk of foodborne illness from home-dried jerky can be decreased by allowing the internal temperature of the meat to reach 160ºF, but in such a way as to prevent case hardening. Two methods can be used: heating meat strips in marinade before drying or heating the dried jerky strips in an oven after the drying process is completed. Directions for both methods are below. When the strips are heated in a marinade before drying, drying times will be reduced. Color and texture will differ from traditional jerky."

#Firefox just keeps getting worse.
I don't know exactly which version this started with, but for the last few months Firefox has been a #CPU hog for me. Even when not interacting with any browser windows, the CPU usage of various processes - the main firefox #process, the content-sandboxing #processes, the WebExtension processes - will be taking significant CPU in bursts. There's frequently an Isolate... process using ~100%, and the main process will sit at 90% for a while before jumping to 160%.
It's significant enough that it makes actually using the #browser #annoying. Pauses for one or two seconds while typing or scrolling as it does ... whatever it's doing while chewing CPU, and these happen every few seconds. Like 3 or 4 times for each line I'm typing in this window right now.
There's nothing obvious to account for this workload. There are no videos playing, or animations, or sound. There are no continuously-updating pages or web apps running. I have uBlock Origin (adblocker) and Privacy Badger running, which significantly reduces the amount of work the browser does because there's no ad scripts to screw around in the background. The only thing I'm actively doing in Firefox at the moment is typing this toot. And yet still it pauses constantly.

I have developed a habit of buying different sticks of meat from gas stations / dollar stores / convenience stores.
It’s always ‘just in case I get hungry later’ but it’s usually a mistake as they just make my stomach gurgle.
Oh sketchy meat stick. A toxic relationship filled with pain and regret.

The first #sourdough #bread loaf came out ok. Not as sour as I would have preferred but I figured out how to fix that.
I always hated just throwing away the discard and didn't want a long recipe to use with it. A quick search found this super easy cracker #recipe with no fuss.
Bonus: I used some of the #cajun #seasoning I picked up in #NewOrleans where I bought my kid some #alligator #jerky.

@amiserabilist @mmiasma I've been to the one in Baldwin County. May in fact be a #cult . The #jerky , of which there is an entire wall, was pretty good as far as those things go, but there's a company in Pennsylvania that makes it better...I think they're just outside Philadelphia, IIRC. I should find the name of that brand again. I think they sell through #Wawa . -

Anyone have a recommendation for #bison #jerky? I'm looking for something from free-range, 100% grass-fed bison, with really simple ingredients—ideally sugar free.
I had been buying from Black Forest Bison, but they seem to have disappeared. They had a product that was just meat, salt, and black pepper.
(Roam Free Ranch qualifies except for sugar-free, but they *advertise* it as zero sugar. Don't want to buy from shady people.)
There are a lot of vendors to sort through. Any suggestions?

I just opened a pack of #Costco extra thick #jerky for the first time and it was all rotten, even though the package said it was good until 04/16/2024. I double checked and the package said “refrigerate after opening” not before. What a waste of money! That was the first time I bought jerky from them and it’ll definitely be the last time. Thank goodness I had another bag of jerky from a different brand. *That’s* still good at least.

If you happen to make your own corned beef, you might be inclined to pass it by, but I’m always buying beef roasts on sale to make into beef jerky. Why shouldn’t I make some with the corned beef?
