Oversteeping can bring out unwanted bitter notes.
Fun fact: we often confuse astringency with bitterness. Bitterness lingers in your mouth after drinking, while astringency fades quickly.

This morning, in our tea room in #Treviso, we have a #Gyokuro tasting scheduled, featuring one of the most precious #Japanese teas.
Gyokuro (玉露), meaning "Jade Dew" or "Jewel Dew" in Japanese, perfectly captures not only the rarity of this tea (only 0.3% of all tea produced in #Japan is Gyokuro) but also its rich, intense aroma, a pure expression of umami.1/3

This is the first batch of tea I ordered straight from Japan.
* [senkien] Uji Gyokuro “Zuiun” - a nice sweet brew with nice umami. Stays pleasantly on the tongue. I get 3 nice steep from it. It has a superior taste to the Yamamotoyama gyokuro I’ve been buying at the Asian supermarket.
* Special Karigane Golden This is an early season (golden) stem tea made from gyokuro. Very sweet, smooth, slightly floral, not as strong as the gyokuro but similar in taste. I am drinking the first steep now. I will probably add this as an alternate to hojicha or genmaicha for evening drinking.
*[senkien] Asamiya Kanmuri Sencha “Shigaraki” - a nice sencha from a good growing area. Sencha is not the top of my tea list. I am more likely to make gyokuro, oolong, or jinjunmei for my main daytime drink. I will probably not buy this again, not because it is bad, but because I have too many other options I like.

After a long closure due to the #COVID19 pandemic, the #JapaneseGarden ⛩️🌸 in #Leverkusen is open again 😊 The garden was created between 1912 and 1914 at the instigation of the then general director of #BayerAG, Prof. Carl Duisberg, who had a passion for garden art. Japanese #sencha teas have a special flavor that I can't find anywhere else.
They remind me of the sea and the pine forests next to the beach.
This product is one of my favorite. The delicate umami meets sodium mixed to roasted hazelnuts.1st 🫖 at 75°C for 30s

Got my first ever shincha (from Wazuka, Kyoto) delivered recently, and have been giving it a few test brews. Delightful flavour, but what I really can't get out of my head is that the leaves smell *exactly* like a perfect nectarine (not independently verified, ymmv)

Brewed Sencha Scent of Mountains again at 175 F for today's tea. Was gonna go cooler than last time, but didn't check notes first, and brewed again at same temp. Oops. Next time, 170 F.

I've just given the kyusu its inaugural brew, with a wonderful gyokuro. It's a tiny little thing, a mere 160 ml, so not one to bring out when for serving guests. For when it's just little old me enjoying one of my fancier teas, it is perfection.
