When offering cordial salutations to one who has elected for "they/them" or other pronouns averant to either masculine or feminine presentation, clearly Sir or Ma'am is not correct. What is a valid stand-in for such honorifics? "Y'all" seems a bit comparably informal but it's all I can come up with off the cuff.

I've never been a Ms. I worked really hard to be a Dr. & it just feels a bit like #discrimination when #official #documents are addressed as Ms when they have my name on record. Is the downgrade #gender based? #EqualitiesAct #prejudice #female #equality #respect #honorifics #misogyny

My literal minded-ness has always rubbed people the wrong way but there are some things I won't budge on for anyone.

Are you a sibling (or near as) to my Mother or Father?

Then you Ain't my Uncle nor My Aunt.

Are you the child of my Uncle or Aunt?

Then you Ain't my Cousin.

This has gotten me uninvited from family gatherings & also kept me out of many sketchy situations.

Don't let 'Tradition' batter you into accepting things you feel aren't right

I encourage my students and academic advisees to pay attention to how their instructors introduce themselves on the first day of class and use honorifics accordingly. I also tell them when in doubt go with the more formal/higher ranking option (Prof. or Dr.).

For me personally, I introduce myself to students as "Dr. Moorberg", but am not opposed to "Colby" or "Moorberg. I do get annoyed by "Mr. Moorberg" though. I prefer either formal or informal, and using Mr. just seems like a lazy attempt at formality. I acknowledge I have the luxury of assuming someone using Mr. is likely not because they are trying to dismiss my qualifications, which brings me back to my recommendations above.
