    OK, having tried this:

    => 10:1 brine is pretty damn strong for this. No more than 1/8 oz - like 1/2 tsp - a few drops, a couple dashes, i.e. small - probably a small pinch of salt

    => It does lose some body/spice when not using the Celery Seed tincture (I'll share the technique in another post)

    That said, it does brighten up the heavy demarara/black walnut bitter, so still pretty good

  9. It's chilly outside, so tonight's cocktail is the appropriately named Autumn Sweater.

    1 oz Old Forester 100 proof rye
    ½ oz Averna
    ½ oz Amaro Nonino
    ½ oz maple syrup
    1 dash Xocolatl Mole bitters
    1 dash Regan’s orange bitters

    Stir all with ice and strain into a rocks glass with one large ice sphere. Garnish with half an orange wheel.

  15. Felt the need for some mezcal last night, so I made this "Naked and Famous" cocktail. Really well balanced.

    Joaquín Simó originally created this variation while at New York speakeasy Death & Co. He describes it as “The bastard child born out of an illicit Oaxacan love affair between the classic Last Word and the Paper Plane."

    1 oz Xicaru Silver 102° mezcal joven
    1 oz Yellow Chartreuse
    1 oz Aperol
    1 oz Lime juice

    Shake all with ice and strain into a chilled coupe.
