Made a vegetarian version of 牛丼 (gyudon, beef bowl) tonight, with tofu instead of beef. Not vegan because I couldn't resist making the 温泉卵 (onsen tamago, hot spring egg) to go with it.
Originally these eggs were cooked in the water of hot springs, but with London sorely lacking in a good onsen that I could visit with an egg, I had to make do with simmering it at 60 degrees for an hour. It results in a weird, fluffy, but quite nice soft egg.
And I got the most delicious (and expensive) あきたこまち akitakomachi rice from Akita prefecture, although you can't really see it here 😁

頂きます. Lunch of 牛丼 (Gyūdon)! It was so good! This is still one of my favorite dishes to cook up for a cold afternoon.

Didn't eat at my usual #food spots. But I ordered something familiar.
I used to order 🐮 #gyudon at Tokyo Bubble Tea till the quality of their beef got bad. Not terrible, but some-unchewable-bits-kind-of-bad.
Haven't dined at Tokyo Tokyo in yeeeears. The menu has changed. The salmon meal I used to order is gone.
I call this budget* gyudon. Instead of raw runny egg on top, it's omelet-style. Beef was pretty decent. Rice wasn't the #Japanese kind, just regular #rice.
Good enough. 👍
