Vielen Dank!

Scientists Have Finally Identified Where #GlutenIntolerance Begins
Using transgenic mice, an international team led by scientists from McMasters University in Canada has identified a crucial role played by the very cells making up the gut's lining, describing a major stepping stone that could lead to new therapies.
#Celiac disease is in essence an #autoimmune disorder triggered by the presence of a group of structural proteins known as #gluten in the #intestines.

Some 13% of people are wise to avoid regular #bread due to #glutensensitivity, aka #glutenintolerance (a smaller percentage have the more serious celiac disease).
Enter #sourdough. If made properly—the old-fashioned way—sourdough can be an alternative that doesn’t cause digestive issues, even though it contains gluten.
Confusing! But the writer, whose son stumbled on this solution, explains the science. https://medium.com/wise-well/sensitive-to-gluten-maybe-youre-eating-the-wrong-kind-a13344f01332

#Glyphosate, pathways to modern diseases II: #Celiac #sprue and #GlutenIntolerance
2013 December
Anthony Samsel and Stephanie Seneff"Evidence of disruption of #GutBacteria by glyphosate is available for poultry (Shehata et al., 2013), cattle (Krüger et al., 2013), and swine (Carman et al., 2013). Glyphosate disrupts the balance of gut bacteria in poultry (Shehata et al., 2013), increasing the ratio of #pathogenic #bacteria to other commensal microbes. #Salmonella and #Clostridium are highly resistant to glyphosate, whereas Enterococcus, Bifidobacteria, and Lactobacillus are especially susceptible. Glyphosate was proposed as a possible factor in the increased risk to Clostridium botulinum infection in cattle in Germany over the past ten to fifteen years (Krüger et al., 2013b). Pigs fed GMO corn and soy developed widespread intestinal #inflammation that may have been due in part to glyphosate exposure (Carman et al., 2013).
"Glyphosate Effect: #Desulfovibrio overgrowth
Dysfunction: hydrogen sulfide gas
Result: inflammation"Full article:

New: the 'shops' and 'food' in #MapComplete now have a few more diet-options. One can now mark if they have a #sugarfree #glutenfree and #lactosefree assortment - important for people with #diabetes, #lactoseIntolerance or #glutenIntolerance and want to get some #GlutenFreeBaking
Additionally, one can #filter for those properties to only show shops having such food, but there is very little information about this yet! So, go out and map!
Added because @pietervdvn's aunt has #diabetes

@Mehrad
We never thought of gluten as a protein in detail until now. Very interesting! We are interested in how #soyFlour fits in with #gluten's story.
Also to what extend spraying the carcingenic #RoundUp on the #soy crop, before **and after** harvest (as farmers for #Nestle were caught doing, to speed up the #dehydration process of #coffeeBeans a couple years ago), might be responsible for the highly-prevalent #glutenAllergy, today.

The Wilderness of Ill
I came across a song I wrote and recorded years ago, titled “Fences.”
“I’m looking for a land with no fences. I’m heading for the wilderness, where the land is still at rest.” A year after writing it, I moved from the city to the wilderness.Ten years later, I found myself wandering in another desert place. I had always been a man of good constitution. In my late 30s, I could not seem to stay well. I was wandering in the Wilderness of Ill.
Now another ten years have passed, and even though I have the typical aches and pains of a 40-plus-year-old body, I have my health back. Perhaps with age comes wisdom, but also a willingness to listen to those who might have the answer. The healing began in my belly and moved to my mind.
First, I discovered I was gluten intolerant. I simply stopped eating wheat and could stop drinking bottles of Mylanta. My gut healed. Now I’m having to cut back on soda, namely Dr. Pepper, which I am addicted to, but it is a nice problem to have. For a while there, I couldn’t have any because of severe heartburn.
Secondly, after much consultation with friends and my doc, I started taking Zoloft. I had avoided the symptoms of depression for years. Being someone who enjoys life and laughter has given me many coping mechanisms, but the ups and downs are taking their toll as life’s stresses increase. I was worried that my creativity would disappear, and it has been an adjustment. Now instead of the muse coming out of my manic phases, it is arising out of my center. There is more work involved, but the joy is deeper.
So I no longer wander in the Wilderness of Ill, though I still spend way too much time lurking around its borders. My belly and brain serve as gentle voices to steer me back into the land of plenty.
