  5. Tangent to nothing a few months back noted Melinda’s #GhostPepper wing sauce didn’t bring the expected heat. Since then it’s become clear our heat threshold appears to be abnormally high. This one has also aged well and turned out to be more flexible than expectations for wing sauce.
    Feel free to mention #HotSauce favs here if you have them. Just no #Sriracha as that’s just a baseline everyone is familiar with. It doesn’t have to be specialty shelf

  13. Last year I planted a (1,641,183 SHU) a (1,463,700 SHU) and a (1,001,304 SHU.)

    Not one grew. But they lived through the winter and all are thriving, small plants, no blossoms, no fruit.

    I bought another Carolina Reaper seedling to try again and hit the jackpot. It's huge, covered in blossoms and green peppers.

    When the first one turns red, I plan to cut it in half and taste it.

    I had a really productive #GhostPepper plant in my garden last year. At the end of the season I had so many of these crazy-hot peppers -- more than I could easily use -- so I took several cups of them, chopped them up with some fresh garlic, and tossed them into a #fermentation jar. Which I left in a dark place for 8 months, to do its thing.

    Super-spicy #peppers ferment very slowly, since the high-capsaicin content is something of an antibacterial.

    I had no idea if it would work. I've only ever fermented things that work fairly quickly, and are ready in a month or two.

    Today I opened that jar and it smells like HEAVEN. Quick taste gives all the flavours of black garlic and sweet chilis, with a big spicy kick, and SO MUCH umami.

    Gave the peppers and brine a boil to kill off any still-active lactobacillus and stop any continued fermentation, added sugar to taste, and blended.

    This is the best #chili paste I have EVER made, and it has 4 ingredients (plus water and time).

  29. A plate of true terror: I harvested and dried my ghost peppers and habaneros on Sunday. Now I’m too frightened of them to do anything with them other than stare and shudder in fear.
