Had my 2nd go at baking fritters, and they’re fantastic! I chose fresh blackberries this time, and I really like how purple they are (my favorite color). I was able to monitor the oil temperature better, resulting in the dough getting fully baked.

One of my favorite things to do with the zucchini and summer squash abundance from my garden: https://sallysbakingaddiction.com/zucchini-sweet-potato-fritters. I use orange yams, not the yellow sweet potatoes, for the added color and because that's what I usually buy. I add fresh shredded parmesan thanks to another recipe I read and I use the pancake plate in my waffle iron to make them nice and symmetrical and avoid the mess of frying.

I just made this dipping sauce (and the fritters to go with it) - and it is truly awesome. If you don't like it that hot, remove the pith & seeds.
40 g tamarind block
6 garlic cloves, peeled & crushed
2 tsp superfine sugar
1/2 tsp salt
1 tbsp fish sauce
2 finger chilies, sliced into rings

I followed a Nigel Slater recipe to make sweetcorn & kimchi fritters. He uses fresh corn and I only had frozen. On the other hand, my kimchi is homemade.
Ingredients:
- kernels from two ears of corn (or about 200gr of frozen sweetcorn)
- 2 spring onions
- 2 egg yolks
- 250g kimchi
- 2 tbsp soy sauce
- 50g plain flour.Mix everything, make patties and fry in a bit of oil for 4 to 5 minutes on one side (no stirring!) and 2 minutes on the other side.
