  1. #VegetableStew with Herbed #Dumplings

    "Fluffy herb-infused dumplings are spooned directly onto this cozy vegetable stew so they soak up the savory broth as they steam. Hearty red potatoes bulk up the base, while pearl onions bring bite-sized bursts of sweetness that complement the earthy mushrooms and carrots. Blending half of the navy beans until they’re smooth before adding them to the pot helps thicken the stew and give it body, not to mention add fiber to keep you satiated. The rich flavors of red wine and vegan Worcestershire sauce transform standard veggie stock into a heavenly broth that practically begs to be slurped up at the end of your meal. Be sure to garnish each serving with extra fresh herbs, and enjoy!

    Tip: To peel fresh pearl onions, place them in boiling water 1 minute; drain. When cool enough to handle, squeeze from the root end to pop them out of the outer skin (you may need to cut the end of the onion).

    Ingredients

    8 oz. fresh button mushrooms, halved
    1 cup sliced celery
    ½ cup chopped onion
    ¼ cup red wine or low-sodium vegetable broth
    2 tablespoons no-salt-added tomato paste
    3 cups low-sodium vegetable broth
    1½ lb. small red potatoes, halved or quartered into bite-size pieces
    3 carrots, cut into 1-inch chunks
    8 oz. fresh pearl onions, peeled, or 1 cup frozen pearl onions
    1 parsnip, cut into 1-inch chunks
    1 tablespoon vegan Worcestershire sauce (such as Robbies brand)
    2 teaspoons chopped fresh thyme
    1 teaspoon garlic powder
    1 bay leaf
    1 15-oz. can no-salt-added navy beans, undrained
    Sea salt, to taste
    Freshly ground black pepper, to taste
    1 cup white whole wheat flour
    2 tablespoons chopped fresh herbs, such as parsley, chives, thyme, and/or basil
    2 teaspoons nutritional yeast
    1 teaspoon baking powder
    1 teaspoon onion powder
    ⅔ cup unsweetened, unflavored plant-based milk
    3 tablespoons soaked raw cashews

    Instructions

    Soak cashews in enough very hot water to cover 15 minutes; drain and rinse.
    In a 5- to 6-quart Dutch oven cook mushrooms, celery, and chopped onion over medium 4 minutes, stirring occasionally and adding wine, 1 to 2 tablespoons at a time, as needed to prevent sticking. Add the remaining wine and cook about 4 minutes or until liquid has evaporated. Add tomato paste; cook and stir 2 minutes. Add the 3 cups broth, stirring to remove any browned bits from bottom of pan. Add the next eight ingredients (through bay leaf). Bring to boiling; reduce heat. Cover and simmer 15 to 20 minutes or until vegetables are almost tender.
    In a small food processor or blender process half of the navy beans until smooth. Add to stew along with remaining undrained navy beans. Season stew with salt and pepper. Remove bay leaf. If stew seems too thick, stir in enough water to reach desired consistency.
    Meanwhile, for dumplings, in a bowl combine flour, herbs, nutritional yeast, baking powder, and onion powder. In a small food processor or blender combine milk and cashews. Process until smooth. Add to flour mixture; stir with a fork just until blended.
    Drop batter in eight portions over surface of stew. Cover and cook 10 to 12 minutes or until a toothpick inserted into dumplings comes out clean. If desired, sprinkle servings with additional chopped herbs."

  2. Curried #ButternutSquash and #Cauliflower Stew

    Prep-time: 25 MINUTES / Ready In: 45 MINUTES
    Makes 8 cups stew + 4 cups rice

    "Whip up this colorful curry stew when squash season is in full swing. Cubes of sweet butternut squash get mouthwateringly tender as everything simmers on the stove and cauliflower rice absorbs the fragrant flavors of the Indian-inspired broth. Green bell peppers, carrots, and spinach add extra veggie goodness, while cilantro and fresh lime juice, added just before serving, brighten things up. Ladle a hearty portion over a bed of brown rice and enjoy a comforting meal that warms you up from the inside out.

    Tip: To avoid going overboard on saturated fat, make sure to use refrigerated coconut milk beverage and not canned coconut milk for this recipe.


    Ingredients

    1 cup chopped onion
    1 cup chopped green bell pepper
    ½ cup chopped carrot
    4 cloves garlic, minced
    2 cups low-sodium vegetable broth
    4 teaspoons curry powder
    2 cups unsweetened coconut milk beverage
    1¼ lb. butternut squash, cubed
    1 10- to 12-oz. package fresh cauliflower rice
    1 5- to 6-oz. package baby spinach
    2 tablespoons lime juice
    ¼ cup chopped fresh cilantro
    Sea salt, to taste
    Freshly ground black pepper, to taste
    4 cups hot cooked brown basmati rice
    Lime wedges, sliced jalapeño peppers, and/or fresh cilantro (optional)


    Instructions

    In a 5- to 6-quart Dutch oven cook onion, bell pepper, carrot, and garlic over medium 4 minutes, stirring occasionally and adding broth, 1 to 2 tablespoons at a time, as needed to prevent sticking. Add curry powder; cook and stir 30 seconds. Add the remaining broth, the coconut milk, squash, and cauliflower rice. Bring to boiling; reduce heat. Cover and simmer 20 minutes or until squash is very tender.
    Transfer 2 cups of the stew to a small blender or food processor. Cover and blend until smooth; return to pan. Stir spinach into stew; cook 2 to 3 minutes or until spinach is wilted and tender. Stir in lime juice and cilantro. Season with salt and black pepper.
    Serve stew over basmati rice. If desired, serve with lime wedges, jalapeño peppers, and/or cilantro."

    Ingredients

    1½ large yellow or white onions, chopped into ¾-inch pieces (about 3 cups)
    3 medium carrots, sliced lengthwise and cut into ¾-inch pieces (about 2¼ cups)
    3 ribs celery, cut into ¾-inch pieces (about 1 cup)
    2 medium portobello mushrooms, cut into ¾-inch pieces (about 4 cups)
    6 cloves garlic, minced
    2 lb. white potatoes, peeled and cut into ¾-inch chunks (about 6 cups)
    ⅓ cup no-salt-added tomato paste
    1 tablespoon dried Italian seasoning
    1 tablespoon paprika
    2 teaspoons finely chopped fresh rosemary
    1½ cups thawed frozen peas
    ½ cup chopped fresh parsley


    Instructions

    In a Dutch oven or soup pot, cook onions, carrots, and celery with 1 tablespoon water over medium-high heat for 8 minutes, stirring frequently and adding water, 1 to 2 tablespoons at a time, as needed to prevent sticking. Stir in mushrooms and garlic; cook 5 minutes more, stirring frequently and adding water as needed.
    Stir in potatoes, tomato paste, Italian seasoning, and paprika. Add 5 cups of water. Bring to boiling; reduce heat to medium-low. Stir in rosemary. Cook, covered, 15 minutes, stirring occasionally. Stir in peas; cook, covered, 5 minutes more or until carrots and potatoes are tender.
    Transfer 2 cups of the mixture to a blender. Cover and blend until smooth. Return to soup pot. Stir in parsley."

  14. Over a decade ago when I was still new at Twitter, I chance followed this person who retweeted Dr Greger (#NutritionFacts.org) and #PCRM (physicians committee for responsible medicine). I also leaned about #ForksOverKnives. I wish they were here on the Fediverse.
    Anyway, I’m still grateful for the person. (She followed me back eventually, and I was able to thank her before she left Twitter)
    Deciding to #goVegan was the best decision I’ve made in my life. 💚

  17. @GurpreetSingh You may be interested in a #wfpb or whole foods plant based diet, that emphasizes healthy food that can be exclusively vegan too. #ForksOverKnives have done a good documentary on it and you can check their website out for more tips and info.

  18. @gatesvp @filiph I do agree that a cow & many animals that are part of the animal agriculture industrial complex are used not just for food but for so many other different components.

    However, I do believe strongly in transitioning away from cows as food & industry will find innovative ways to do things without each of those components.

    Some simple eg:
    -Cow meat - plant based meat or veggies that are nutritionally equivalent (#ForksOverKnives discusses this as a #wfpb or whole foods plant based diet)
    -Cow skin - Since synthetic is not great there is mushroom leather: mylo-unleather.com/
    -Cow milk - plant based milks are more than satisfactory. Here's one I drink, it's fricken fantastic in terms of nutrition. Look at all that B12: soy.com.au/product/soy-protein
    -Cow calcium - Plant based calcium: youtu.be/InaujlG-oGQ
    -Cow collagen - Vegan alternative exists: nutraviva.com.au/blogs/news/th
    -Cow hair - This one is cowhide right? Which is mostly used for leather right? So as above.
    -Cow Renin - I know this is for making cheese, so you can just use plant based cheeses. There's a lot of good ones out there, but it's a matter of taste.

    Yes, I know there are challenges with each of these things (cost, availability etc.), and only a #vegan would embrace the alternatives, but if you are even remotely concerned with the planet (#ClimateChange, #ClimateCrisis, #ClimateEmergency etc.) then these are things that need to be embraced. Or simply embrace the rising sea levels and heat waves. 😂

  19. @DoomsdaysCW Sorry to hear that your body can't handle a vegan diet.

    I have to let you know though that even if plants have sentience (which they do not, no matter what the click baity headlines will have you believe), that the amounts of plants that are used to feed animals is phenomenal.

    This article shows the incredible statistics of all the land as pasture (full of grass and living plants - 2.89 billion hectares) and land for animal feed (growing all the plants that farm animals eat - 538 million hectares).

    So really, by eating animals, you are causing plant suffering too (if you are one to believe that plants suffer, which for the record, do not, and evidence thus far is lacking).

    So continue doing what you are doing, but know that for the people that can switch to a vegan way of life or philosophy (and that would be a lot of people), they very well damn should if they care about the environment (that is, humans are contributing to this #ClimateEmergency), their health*, and, finally, for the animals (the thoughts, and wishes of an animals is something that is constantly forgotten or ignored).

    *If they really care about their health they should implement a #wfpb or whole foods plant based diet, that doesn't buy in to all the 'processed' junk food. The website and documentary #ForksOverKnives demonstrates this quite well.

    Thank you though for acknowledging that cutting down animal meat and processed food consumption is a good idea.

  20. @rabia_elizabeth I ask this in good faith, but what science have you seen or can provide, showing that a #vegan way of life is nothing but good for your health, the planet, the environment, and most importantly, though least considered, the animals?

    The #science is on the side of a vegan way of life, whether people accept it or not. #ForksOverKnives shows this (on a #wfpb or whole foods plant based diet) regarding health, #EatingOurWayToExtinction is the newest and clearest documentary that shows the benefits of #veganism for the planet/climate, and #Dominion shows the atrocity that is the animal agricultural industry regarding the #AninalRights of these poor creatures.

  21. @smithkevinc @0xBEA I want to +1 in recommending the #ForksOverKnives website. Watching the documentary if you have time will give you a good overview of how it's possible to eat in the healthiest way possible. If you want to go vegan for ethical/environmental reasons in addition to the dietary/health benefits, I have a list of films I can recommend.

I have seen many studies (large scale meta analysis etc.) showing these links between a meat/'normal' diet and the links with cancer, heart disease, type 2 diabetes etc, especially when compared to vegetarians/vegans, but of course my bias is very transparent. 😁

    The movie #ForksOverKnives (free to watch on their website) covers this in better detail, and of course #WhatTheHealth does a good (but some would argue biased) job of going through all the positive aspects of it.

  23. I saw another film recently, and while it is not #vegan by name, it all but confirms it throughout the movie.

    The movie was #TheGamechangers (available on Netflix), and it feels like an updated version of #ForksOverKnives (in fact there are a few 'cameos' of some of the people from the original film). I believe it was very well done stylistically, and I found the animations when discussing the science quite nice. Also, the appearance of #ArnoldSchwarzenegger was, I feel, a great boost to the movement. In fact, I found the executive team consisted of quite a line up, in addition to Arnold the executive producers included:

    -#JackieChan
    -#JamesCameron
    -#LewisHamilton
    -#NovakDjokovic
    -#ChrisPaul

    (There's debates on their dedication to the #veganism movement, as I am sure some will point out.)

    Not sure how I feel about the section on the erection talk but it seems like the film was targeting a male based audience at that point!

    The conclusion was quite clear though, a #PlantBasedDiet, doesn't hinder an athlete, and you can get tasty food out of a vegan diet.

    It is rated well on #imdb and is rated 'fresh' on #RottenTomatoes.

  24. After watching #WhatTheHealth and #Cowspiracy, I made some time to check out a few other similar movies.

    I first saw #Seaspiracy, and the message was very clear to me...

    If you don't eat, but like and admire the intelligence of:
    -#Whales 🐳
    -#Dolphins 🐬
    -#Sharks 🦈
    and
    -#Octopuses 🐙 (side note, #TeamOctopuses! 🐙🦑),

    Then you shouldn't be eating #fish of any kind, and you should very well adopt a #vegan / #PlantBasedDiet. 🐟🌱🐠

    Directed by Ali Tabrizi and available on Netflix, it has the same style as the previous films directed by Kip Andersen, so that could be seen as either a +ve or a -ve, depending on your bias. I thoroughly enjoyed it, finding the whale hunt and the subsequent whaler interview particularly powerful.

    It is rated well on #imdb and is rated 'fresh' on #RottenTomatoes.

    The second film I saw was #ForksOverKnives. This I found to be a much better film overall in presenting the history, science and research in benefit to a whole foods plant based diet. Sadly, I feel like the way it was filmed will put some people off (some -ve reviews talk about it being slow/boring (c.f. What The Health being over the top)). I personally didn't feel that. In fact, I am currently watching the Forks Over Knives Extended Interviews film, because I want to know more! It is the kind of film I wish someone recommended to me when it came out! It's the scientist in me talking. 🧑‍🔬
