Stumbled onto this gem while admiring observations in iNaturalist's Gall Week 2025 project. The two-tailed gumtree gall (Apiomorpha duplex) is, per "Brisbane Insects and Spiders" blog, the world's largest gall. Like many galls made by scale insects in the Eriococcidae, the species makes sexually-dimorphic galls. Los hongos de los eucaliptos
Antecedentes
Con la introducción de las especies del género Eucalyptus al #Uruguay , llegaron otros seres que seguramente vinieron como pasajeros en el mismo barco, los hongos de los eucaliptos Gymnopilus spectabilis (antes descriptos como Pholiota spectabilis).
Esta introducción, que debe haber sido involuntaria, ha tenido consecuencias insospechadas en el territorio uruguayo. En primer lugar debe destacarse el enorme valor utilitario de este hongo, que se ha especializado en degradar los restos de troncos de los cada vez más ubicuos eucaliptos. Pero más allá de su descacable posición en una red trófica degradando productos que de otra forma resultarían enormemente recalcitrantes, el hongo de eucalipto posee un valor extra en la dieta de los uruguayos.
Contrariamente a lo que ha ocurrido en la mayoría de los países donde infinidad de autores han escrito en desmedro de estos hongos, en el Uruguay, ha permeado en la mayoría de los hogares y, con escasísimas excepciones en los locales callejeros de comidas rápidas o carritos.
Al referirnos al hongo de eucalipto, en realidad nos referimos a sus estructuras sexuales, o cuerpos fructíferos (basidiocarpos) – los sombreros o setas, como gustan llamarlos los europeos. El hongo en sí (su cuerpo vegetativo) es esa maraña de pelillos delgados que habita sin pena ni gloria la mayor parte del año alimentándose de los deshechos de los eucaliptos sin siquiera ser percibido por los humanos.
Estos cuerpos fructíferos aparecen en grupos, y maduran de forma escalonada. De modo que el grupo de hongos tiene algunos muy grandes y otros muy pequeños, como si se tratara de una pequeña familia.
Las escuetas referencias bibliográficas a su utilización en alimentación se deben principalmente a que para ser consumidos requieren un procesamiento previo, simple pero fundamental. Si los hongos no se hierven previamente, no son aptos para el consumo humano. Tan sencillo como eso.
Naturalmente estos hongos son duros y amargos. No contentos con eso, es un hecho bastante difundido que producen sustancias alucinógenas y tóxicas. Es por eso que en casi todas partes del mundo están catalogados como tóxicos. Personalmente, no he visto jamás un testimonio de nadie que los haya utilizado como droga de uso recreativo; probablemente porque son tan duros y tan amargos y picantes en estado fresco, y dejan una sensación tan desagradable en el paladar que hasta el psicodélico más entusiasta los prefiere en un choripán.
DifusiónEn Uruguay hay una industria de los hongos en conserva, pero más del 99% de los hongos que se preparan para su comercialización son hongos de eucalipto. Para ello se los procesa en vinagre y agua con sal. Así, se los conoce como hongos en vinagre, y son utilizados como acompañamiento en hamburguesas, salchichas (o panchos como los llamamos en el Río de la Plata), o chorizos (especialmente al pan). Es muy común encontrar hongos de eucalipto frescos para su venta en las verdulerías de Montevideo en otoño.
Desconozco cuántos kilos se comercializan de estos hongos en vinagre al año, pero por ser omnipresentes en los locales de este tipo de comidas y en los supermercados imagino que su volumen de venta anual ¡debe aproximarse al de las aceitunas! Tal es el apetito fúngico de los uruguayos.
Lamentablemente puede constatarse la profunda ignorancia de los proveedores industriales
cuando al observar algunos de los envases del mercado que contienen hongos de eucalipto (Gymnopilus spectabilis), el consumidor encuentra que luce en las etiquetas “hongos (Lactarius deliciosus), vinagre, agua y sal”. Este es un ejemplo no sólo de una aberración taxonómica, sino un reflejo de un desconocimiento supino de la entidad biológica involucrada. Llamo la atención sobre esto, porque resulta evidente la falta de asesoramiento por profesionales adecuados, así como la ridiculez de los contralores bromatológicos, llevados a cabo por quién sabe qué clase de funcionarios que adjudican una habilitación para la comercialización de un producto de consumo humano por parte de empresas que claramente carecen de asesores debidamente formados.#hongosUruguay #hongosComestibles #Gymnopilus #Eucalipto #HongosDeEucalipto #Eucalyptus
