  2. Took the family to Ethiopian Diamond in Edgewater today. We both love Ethiopian food and we've been to most places in Chicago and have our favorite dishes at each place. It was really special to share something that means a lot to us with R's mother from India. Viraj was very good and slept most of the time!

  6. Today's dinner was inspired by Ethiopian & Moroccan food.

    I took the cooking method and main ingredients of atakilt wat (a cabbage potato stew) and used a harira spice mix instead of the traditional ginger, turmeric and cumin, savoy cabbage from the #csa farm and sweet potatoes from the store.

    Served with a vegan patty made a very tasty fusion dinner

    Have you ever heard about black cardamom? I hadn’t until recently. It’s used for Ethiopian spice mixes and makes them smokier.

    This weekend my husband and I made Doro Wat (Ethiopian chicken stew) again and because I had mostly run out of my ordered Berbere spice blend I had to make some more from scratch.

    I used a recipe from the web and compared what I got with the original one. Somehow they were not similar enough. The bought one was smokier and also something else was missing, a hint of what I would describe as German curry spice - which turned out to be ground fenugreek. The lack of smokiness was explained by the fact that the recipe said green cardamom. Luckily I had recently bought the black stuff for another spice blend (mekelesha) and realised that this was the missing element, so I think the person who created the recipe probably didn’t know about black cardamom. I added a teaspoon of ground down black coriander and there we were, a really good Berbere spice blend had been created.

    The tomato and green chilli salad added a nice tangy and hot kick, only the lentils were a bit boring but that was fine. We ate everything with the homemade injera style bread (it’s not the real deal but it works for us).

  13. When cooking plans don‘t work out! 🫣

    This weekend we prepared Ethiopian style Doro Wat with Injera “bread” (and added Timatim salad). We made this before.

    Today things were fine (first three photos) but yesterday I struggled big time with a new (and apparently more authentic) recipe for injera bread. So much that I eventually stepped out to buy some wraps to eat instead. 😒

    I had bought proper teff flour and as per instructions I put it in a bowl to ferment for 48 hours. Well, it somehow was not resulting in a good dough; or maybe frying in oil didn’t work out. Whatever it was, I had to come up with a better plan for today. So out came the recipe I used last time which gave us injera that were like pancakes. I swapped out quite a bit of the suggested flour for teff but otherwise followed the recipe. Here you fry without oil and lo and behold they worked like a dream. They tasted less pancakey too which is a clear improvement. Next time I’ll try using even more teff.

    The timatim salad was spicy! There was some of the wonderful berbere spice mix in it (that is also used for the doro wat) and half a deseeded green chilli. 🥵🤣

    And the doro wat is just sensational 🤩 every single time.
