From what I've read (eg #JohnRobbins, #MichaelPollan, #EricSchlosser, #RichardHeinberg) in the US it's less to do with economies of scale, and more to do with massive federal and state government subsidies to industrial monocrops and their associated businesses (poisons, biotech etc), and a regulatory environment heavily slanted in their favour
