For dinner tonight I made enchilada lasagna. One with chicken and tomatillo sauce, one chicken with an avocado creama, and one ground beef with a nice smokey adobo chili sauce.

Wow. It was good if I do say so myself.

Making green chile #enchilada sauce today - from scratch! This is so much less expensive - and far better tasting - than buying it canned!

We make it, can it and let it set in fridge in 1 QT jars for a couple of days to "enrichen" the flavors.

Then we use leftover air-fryer-whole-chicken - shredded and make green enchiladas w/chicken!

So, so good!
