  1. The magnificent Croquembouche inspired by a Middle Eastern dessert known as “towers of paradise.” This towering dessert gained popularity during the reign of King Louis XIV. A perfect centerpiece for his extravagant royal celebrations. Besides being very visually appealing the Croquembouche is delicious. This one is made with chocolate but some are made with caramelized sugar. Enjoy. #croquembouche #foodhistory #dessert #historicaldessert #weddingfood #partyfood #afternoontea☕️ #frenchcuisine

  6. Pastry napalm exercise complete.

One croquembouche, ready for tonight. Spun sugar's not my strong suit, but I'm fine with the poor man's version here.

  11. So, long story short I'm a terrible baker and somehow I agreed to bake my wife a croquembouche for her birthday, possibly one of the most complex dishes out there (somewhere in the range of 6-8 hours of effort). My wife enjoyed several glasses of prosecco and invited a bunch of friends over to mock me in the kitchen as I fumbled my way through the recipe (the peanut gallery was part of the deal; I didn't mind).

Let's be real, this thing looks TERRIBLE and that's mostly because the shoux pastry didn't rise (apparently I added too many eggs) but let it be known that I absolutely nailed the custard and the caramel, way above everyone's expectations. It tastes great too (mainly because of the custard).

"You know, he was one egg away from making a proper croquembouche, god dammit" - my wife, half in surprise and half in disgust
