Slow Cooker Comfort Foods: Cro... -
Can I get some easy, healthy, gluten-free crockpot/instant pot recipes? I'm in for a few months of extreme fatigue and could use a shake up of the routine menu.
No peanuts, cashew and pistachio nuts, please.

Experimental #babiKetjap (pork in sweet soy sauce) inspired dish simmering in the #CrockPot Express.

#Hachee, a #Dutch beef and onion stew, is in the #CrockPot Express on slow cooker setting.
It's probably not going to be done in time for dinner, since I stayed up way too late and mistakenly thought I could drag myself out of bed in time, so I might end up switching it to #pressureCooker setting later on. -

Today's food was very simple, but quite filling and tasty:
- peeled a rutabaga and cut it into fairly large chunks
- washed and peeled a couple of rather large carrots, and also cut those into similarly sized chunks
- washed potatoes, and cut them in half, skin-on
- Put all these in my #CrockPot Express #MultiCooker on top of the grate that came with it, and filled it with water just below the top of the grate. Added salt to the veggies, but I think I added too little.
- Closed the lid, set the valve to 'sealed' and turned the Crock-Pot to Steam function for 8-10 minutes (can't quite remember what I set it to).
- Cut a large onion in strips and added it to a small frying pan with a bit of oil, salt, and pepper, and put a lid on top, on medium to low heat while the Crock-Pot was heating up.
- crushed and sliced some garlic and added it to the onions when it was time to turn the heat up.
- once the Crock-Pot was done heating up and switched to steam mode, I cranked up the heat on the onions and removed the lid from the small frying pan. Stirred it every now and then, and added the garlic when they started to brown.
- once the rutabaga, carrots and taters were finished, I drained them, put them in a separate bowl (to not damage the anti-stick coating), and mashed them all together
- mixed in a knob of butter, salt, pepper, thyme. Would've added rosemary too, but I seem to be out of it.
Obviously you don't need a Crock-Pot Express for this. You can just prepare it in a regular steamer, or even just a pan with boiling water.
If I'd remembered in time, I'd probably have first sautéed the onions and garlic in the Crockpot too, and then set them aside for later, or even just had let them melt into the veggies by leaving them in the pot. Next time I'd probably also not drain the liquid, or at least keep it aside so I can add it back into the mash after pounding the veggies together.

At almost midnight, I decided to take on the Perpetual Stew challenge.
It doesn't really matter to me how long it goes on for, I'm moreso just intrigued for my own selfish reasons.
I will hopefully keep everybody updated as the experiment continues.
Whoever said you can't play with your food, lied.
07/25/23: Water, mushrooms, jalapeños, green, red, and yellow peppers, carrots, red onion, yellow onion, and spices.
I mostly used some of our dehydrated stock to get this started.
