  1. A non-pretty mobile photo of miso-glazed courgettes.
    I follow regular recipes, but then freehand the glaze because I don't have mirin anyway (and it's sugar), so it's miso, vinegar, soy sauce/salt, and yesterday I added MSG for the first time.
    An interesting observation is, this food fools my non-vegetarian body into contentment with a vegetarian meal better than anything tried before. Unlike, say, lentil patties that I expected to see this effect from.

Tonight I threw together this not very authentic but lovingly crafted North African inspired #tagine - a vegetable and chickpea slow cooked stew using up homegrown #aubergine, #squash, #courgette and sweet peppers, with fragrant ras al hanut spice, apricots and dates … and served on a bed of coriander, mint and toasted whole almond wholewheat couscous. Lime wedge to cut through the sweetness of the tagine.

  13. Spaghetti met Gehakt, Prei en Courgette

    Ingrediënten: spaghetti, 250 gram gehakt, 1/2 courgette, 1 prei, 1/2 bakje cherrytomaten, 1 pakje tomato fritto, pastakruiden, geraspte kaas, Aantal personen: 2 Kook de spaghetti beetgaar in kokend water. Bak 250 gram gehakt tot het rul is. Voeg 1/2 in blokjes gesneden courgette, 1 in ringen gesneden prei en 1/2 gesneden cherrytomaten toe. Bak tot de courgette en prei zacht is. Voeg 1 pakje tomato fritto en naar smaak pastakruiden toe. Warm het geheel goed door. Serveer met de pasta en geraspte kaas. Eet smakelijk!

  14. Tortellini in Tomatensaus met Courgette en Gehakt

    Lekker makkelijk, alles uit één pan! Ik gebruikte mijn stoofpan, lekker groot en in die pan kan je tenminste ook iets bakken. Ingrediënten: 1 ui, 2 teentjes knoflook, 1 theelepel sambal, tijm, 200 gram gehakt, 1 courgette, Italiaanse kruiden, zout, 1 blikje tomatenpuree, 1/2 zakje tortellini, 500 ml gezeefde tomaat, water, cherrytomaatjes, geraspte kaas, Aantal personen: 3 Bak 1 gesnipperde ui met 2 fijngehakte teentjes knoflook, 1 theelepel sambal en wat tijm tot de ui zacht. Voeg 200 gram gehakt toe. Bak het gehakt bruin en rul. Voeg vervolgens 1 in blokjes gesneden courgette toe. Bak tot de courgette zacht is. Breng op smaak met Italiaanse kruiden en wat zout. Voeg een blikje tomatenpuree toe. Bak kort mee. Voeg 1/2 zakje tortellini, 500 ml gezeefde tomaat en zoveel water tot alles onder staat. Breng kort aan de kook. Zet de pan op laag vuur met de deksel er op. Laat het geheel zeker een half uurtje pruttelen. Voeg op het laatst een aantal gehalveerde tomaatjes toe. Laat dan ook de deksel van de pan zodat de saus kan indikken. Strooi er op je bord nog wat geraspte kaas over. Eet smakelijk!
