Do you do your own custom spiced tea blend (chai masala)?
Mine contains the usual suspects, plus bay leaf and coriander. I do a mix of ground and whole spice and the combination last for several pots of hot water.

White pepper tastes like unwashed sheep smell, but in the best possible way. #cookstodon #whitepepper #barnyard #GrewUpOnAFarm

And apparently reached the stage in life where I cook lots of things in the crockpot.
I don't know what precisely happened; it seems to be the next step from buying the exact same sweater in five different colours. (Ngl, I have five of one sweater in only 3 colours, and I deeply regret getting 2x cream.)
Tonight is a little bit of an experiment with mustard chicken. I guess I'm going to find out whether this is a terrible idea or not.
I'm still searing the shit out of it before I put it in the crockpot though, so hopefully that will yield good results.
I've had this crockpot for well over 25 years now. I think I used it about a dozen times up until this year. Now I'm using it twice a week, at least.

Put my dinner in the slow cooker. Leftover roast beef, home canned garden tomatoes and salsa (last jar from 2024), guajillo + 2 x garden salsa peppers, spices.
Comfort food for a cold night.
Now I can go savour today's news.

Eastern Europe does soups well, don’t mean to brag 😃

The best tip I have been given for making tabouli is to soak the vulgar (bulgur) wheat in the oil and *lemon overnight.
It's nice and hydrated this morning, though it needed a bit more lemon.

My pizza is in the oven and I am still perplexed.

Takoyaki experiment No.1
Now I think the name of the food itself is a joke! Why?
When turning them the first time, the little buggers look like octopi, wobbly and soft with a little dome on the other side and a mess that kinda looks like legs on the other.
And they try to get away from you!!
Japanese sense of humour! 👍😃

Something I’ve been wanting for a long time finally crossed my path: A takoyaki pan!! 🐙

I'm in a recipe creating/experimenting mood.
Somebody get me some rich people.

Leftovers pizza.
Roasted pepper, chopped bits of bbq pork, pepperoni, and roast garlic.
Homemade 'za sauce from locally-grown San Marzano tomatoes.

Okay, I made the muffins. I ate two muffins. I guess I should stop procrastinating.
I'm not sold on this recipe, but they're still good if you put enough butter on them.

Ima just make myself a nice pot of mussels with white wine, garlic, shallots, tomatoes, and parsley — they feel so decadent comma but they are actually very economical.
And then I'm gonna pour myself a glass of the same Spanish white that I'm using In the mussels, cut myself some fresh French bread for dipping in the sauce (which I'm going to reduce with whipping cream).
And enjoy a lovely evening of Pieces Coming Together.

If I have one cooking tip that will make your life easier, it's roast up garlic in advance, and freeze it.
Tonight's dinner, fish and chips, is remarkably simple to make precisely because I prepped a big bag of garlic Sunday night.
I think we'll try the octopus beer.Flour, beer, roasted garlic, salt.
That's it. -
Buy da man outta noodles and sorel, and Ima try making ackee and saltfish, even though it's not from my island.
Anyone know what happened to cydrax? Can't find it anywhere in Canada. Just peardrax.

Me: Chicken tiki massala, with oven brussels sprouts and broccoli witha honey mustard sauce.
Teenagers home from school: not hungry now might eat later.

We have definitely reached "custom tea blend" season.
Today's sets are:
Star anise, coriander seeds, fennel, green peppercorn, bit of bay leaf, Sri Lankan cinnamon, clove, and cardamom. It's a habit I learned from an old roommate. It's funny how you carry people with you even when you're not in contact anymore.
I only did three, one of which is already on the stove, but I realized afterwards I probably could have used the cat cups to make more.
Also, I need a dedicated chai pot. I'm thinking something titanium that I can also take camping. Considering something with a French press lid, even though I have a Bodum for home.
It would probably give me the maximum versatility.

Homemade egg rolls with homemade plum sauce.

I would like it be known that Fajita Friday is entirely the fault of @C0redump
Insofar as tasty goodness can be considered a "fault".

Not my Caribbean ass enjoying the golden crispy deliciousness!
-
Super cheesy nightshade casserole.
It's kind of like eggplant parmesan, except I also threw in roasted peppers.
The problem is waiting for it to cool down enough that it doesn't burn the roof of your mouth right off.

Is there anything better than bread fresh out of the oven?
Even at 3:30 in the morning while you wait for laundry to finish.

We have had our homemade, all-ingredients-from-our-own-garden Chimichurri for a while now, so I haven't had a chance to try out the pan sauce for my steak.
(Un?)Luckily, we are out of Chimichurri, so I just grabbed 2 sprigs of rosemary and thyme from our garden, pulled out our Avocado oil (the higher smoke point makes a HUGE difference, y'all), red cooking wine, and balsamic and I'm gonna give it a shot in about 50 minutes when the sous vide finishes.

The best part of working from home is baking bread. Today is raisin bread day. I forgot to add the milk powder to the first one, so I'm going to try it as a boule.
The other loaf, a more classic soft sandwich style loaf with the milk powder, it is still proofing (last photo).
My secret to tasty crusty bread is to spray water on the bottom of the oven, with a spray bottle, about halfway through the bake. It is what passes for a sream injection for those of us without thousands of dollars to spend on equipment.

#sourdough refreshed. You know this means tomorrow will be #pizza day!
I'm going for a 30 hrs maturation, 60% light flour, 40% rough flour, 65% hydration
Puntata 12 hrs, appretto 18 hrs (give or take)
