Thanks to all those who replied regarding building a community about cooking, recipes, tips, etc. across Mastodon. It appears that #COM is already in use, but #CooksOfMastodon is available. Given that, I'll start this off by saying that for dinner last night, I made baked tilapia with olive oil, Grill Mates Sweet & Smoky seasoning, black pepper, and freshly-squeezed lemon on top. Corn on the cob accompanied the fish.

Doing a bit of healthy cooking tonight to banish the winter blues. A lovely rainbow of roasted veggies and herbs, some of which I grew. Very important for gut health too (essential to think about when you have an #invisibleillness like diverticular disease).

#HappyHollandaise ! We had a bunch of beautiful leftover roast potatoes from solstice dinner and some extra yorkies, so I made a nice brunch to celebrate @yonabee 's first day off for the holidays. Have you ever made hollandaise before?
A few tips:
1. It's easier than you think.
2. If you are worried about it
separating, you can add a tiny bit of cream or milk after you've made it to help stabilize it for holding. (Milk solids for the win)3. Slow and low, that is the tempo.
4. Add butter to eggs and your sauce will have legs, but eggs to butter and your sauce will sputter.
5. If you want to make bennies for a crowd, you can hold your holly at a safe temp in a thermos for quite some time. (This is how I survived the tradition of bennies every Sunday with the coast guard, as with a crew of 13 we had no kitchen staff and it was just me, myself and I running the show.)
Fun things to add:
A dash of hot sauce or a dab of miso and some garlic while you melt the butter.
Tarragon and finely minced shallot (oh wow, you just made béarnaise!)
Lime instead of lemon, or any other tart citrus for that matter. Lime is great with a mango bacon Benny. Grapefruit is amazing with a garlic shrimp one!

CW: Food and cooking - lamb tagine
Here's the "tagine" from last night. I think I have my spice balance to where I want it now. This was basically perfect. Kids liked the tagine, but not the couscous so next time I'll make a little rice for them.
I really ought to actually write up the recipe and share it. It's based on one that I found on YouTube, but I'm definitely making my own tweaks to it at this point.

CW: Cooking, Adapting to what you have/where you are
Pending hearing back from a guest, I'm going to be making a lamb tagine for dinner tonight. I struggle with calling it a "tagine" since I don't actually own a tagine. I own a Dutch oven, and I cook this particular recipe in it. I've made it twice, and it's phenomenal tasting - a huge success.
But I don't make it in a tagine? Can I still call it Lamb Tagine with Apricots? I don't know.
What I do know is that if our guest for tonight confirms their attendance, I'll be making that, and I'll likely have a running series of posts here about what goes into making it.
Like any heavily spiced recipe, there's some personalizing that goes on to make it to your (and your audience's) liking, but I think I have it about sorted out for batch number 3.

Jetzt, wo ich endlich mein bestes Messer richtig scharf bekommen habe, kann ich bestätigen, dass die Tränen beim Zwiebel Schneiden komplett ausbleiben, wenn das Messer nur scharf genug ist :)

Cranberry sauce is simple to make. Used a little less sugar than was called for, added orange zest and a few spashes of sherry. Very tasty cranberry sauce. #cooksofmastodon
