  7. For Day 13 of Everyday Vegan, we’re over the moon to feature Kristy Alger—a fearless animal activist, writer, and spokesperson for Animal Liberation Tasmania. Known for her compelling voice and tenacious advocacy, Kristy has dedicated her life to defending animals, leading campaigns like Defund Tasracing to expose Tasmania’s greyhound racing industry.

    A gifted writer, Kristy excels at using her words to create compelling arguments for animal rights. This talent shines through in her book ‘Five Essays for Freedom’, an exposé of the animal industrial complex. With her early inspirations and commitment to civil disobedience, Kristy is a force in the animal rights movement, urging us to rethink traditional advocacy.

    Today, Kristy brings us her take on tabouli—which happens to be a Proper Tabouli recipe. In true storyteller style, Kristy shares her top tips, passed down from her friend Nagham, for making tabouli shine.🍅🌿

    Here’s Kristy’s advice for an unforgettable tabouli:
    1. Go heavy on the parsley.
    2. Use the flesh of a lemon, not just the juice.
    3. Salt those tomatoes—if you think you’ve added enough, add more! It’s essential to bring out their flavour and reduce excess moisture.

    Kristy’s recipe is a revival of the refreshing classic Levantine salad, packed with flavour. She suggests serving it with a creamy white bean dip, flatbread, olive oil and za’atar for dipping, some olives, fresh dates, cherries when they’re in season, and add some orange slices as a palate cleanser.

    “Then sit with loved ones communally and enjoy together, reaching your hands in towards one another in joy and love. Because that’s what food should evoke in all of us: togetherness,” says Kristy.
