I attempted #cooking #clottedcream (#food) a few times and got it just right once when I got raw heavy cream from a #local #dairy
But their supply is unpredictable and they are in an inconvenient direction check if it's in. I gave up
Mother-in-law mentioned how much she loved it and is coming in the fall, so I found another potential dairy local between work and home
Their cream is pasteurized and homogenized but not UHT. That seems to be enough to work, because

I made really good #clottedcream with raw cream from a local dairy a few weeks ago.
Later I went back to get more cream and they were out. Went again the next morning hoping to catch the cows earlier. Nope, still out.
I just got back from a trip going the prev day (i.e. Frid morn instead of Fri aft or Sat morn). Out again!
Did I just get lucky? There were multiple jars of cream when I found it before.
I think even #CSA members are first-come-first-serve on the cream so that wouldn't help :(

#ClottedCream Attempts 1, 2 and 3 were from #rawmilk from the #dairy down the street. Result: Weak and thin
Attempt 4 is from a pint of raw heavy #cream from a different dairy about 20min away. The cream itself was already thick to the point of needing to be scooped out
The near-pint of result is incredibly thick, yellow and buttery and looks just like what we got at #HighTea in #UK
Last week I think I mastered a #scone. Getting close to production quality!

Another batch #rawmilk into the #sousvide to make #clottedcream.
And this time Imma try a different #scone recipe because I didn't really like the Buckingham recipe. Maybe it was the real buttermilk (side product of the cream process) or maybe it was the baking soda. A bitterish taste.
I wanted to make #strawberry #jam as well but those seem to be going out of season now. I guess jarred jam will be...ok.

This basically worked. It looks and acts just like in the videos.
The cream is a little soggy. I think the real stuff I had must have been drained somehow. And maybe whipped to fluff it up a little?
I tried a little on a cracker and it was...OK. I didn't taste it that much. I might need a higher heat to get a little more cooked flavor. Or maybe I should just put more on.

Soooo...the slow cooker didn't really work. I'm not sure why, but since it definitely went way over the temp and I had some brown crusties, I'm guessing that's it.
I feel like this new setup for the other half 1/2 gallon has a lot of potential, tho.

When the skin/cream layer starts getting thicker, it retains heat better and overheats more easily. I now have the slow cooker turned down and the lid cracked, but it may be overcooked
For future batches, I don't want to leave the oven on all day, even at only 180F. I can probably rig something up with the sous vide
Or maybe easier would be to float the cream in a pan in water in the slow cooker for more even temp control but a simple lid

I pour 1qt into my slow cooker. Putting it on the high setting heated water to 185F which seems perfect. After 3-4h, the milk was ~195F and I could see some browning on the sides so I changed it to low.
I see cream forming on the top, tho! I think it is kind of working!

Local #dairy #farm stand doesn't have cream, just raw whole milk.
This should be possible. It's hard to find a single recipe that covers all the info, but the basic concept is just to heat-but-don't-boil, cool and scoop. Times vary as does info on going around more than once.
A half-gallon of raw milk only cost $3 and I think will support two experiments, so let's try it!

Just seen today’s #GoogleDoodle, and that’s it, I’m going to have to get some #scones in at our next supermarket shop. Probably cherry flavoured scones, eaten with Morello cherry preserve. And Cornish clotted dream. Scottish me eats scones the Cornish way, cream on top. My #Somerset husband with a dad from #Cornwall eats them #Devon style, jam on top. Traiter haha! Somerset cider and apple cake, served warm with extra thick cream. We also have some Rodda’s Cornish clotted cream in I’ll be having with it another night. Expect to be eating this for the next 3 nights 😜
