  1. Decorating the Christmas cake was a bit of a last minute affair but I think I got away with it.

  2. It's not Christmas until I get these bad boys made.

My sisters and I split the cookie baking responsibilities for Xmas every year (we make cookie boxes for friends). My sisters refuse to make these sugar cookies because they're so time-consuming to make between the dough making, the dough chilling, the rolling out and cutting, the watching them like a hawk in the oven, and then frosting them. But, for me, they're "Christmas essentials" so I spend the time to make them.

Edit: First batch guinea pig flavor test: only mildly spicy, and needs salt. Otherwise tasty. Rated two Hubby-thumbs up.

  4. Here's a recipe for low fat (swap sugar with Stevia for low sugar) oatmeal cookies, small batch, maybe a dozen or so cookies. I needed a recipe for cookies for a family member with diabetes and heart issues. I may use mashed avocado instead of applesauce for a healthy fat, better texture, & add chopped apples, dates, or dark chocolate chips. For gluten free, try it with a gluten free flour.

  5. @dasparky

The batter is chilling in the fridge, dark and fudgy. It has all the appearance of being evilly delicious. I'll probably bake them tomorrow.

  6. All of that makes three full sized cakes and three 3/4 sized.

The house is starting to smell like when mom, aunts and grandmother were baking.

  7. Christmas baking season starts this weekend. 7.5 pounds of dried and candied fruit with a cup of good brandy. Later today I will be baking fruit cakes. Then I will look at staring various tarts, and squares. Next week several dozen donuts for work.

Our cat was supervising me and making sure I didn't cut myself with the knife.

  8. This week I'll be making low carb mincemeat for mince pies and possibly, if there is any left from a second batch later, to add to a Christmas style low carb fruit cake.
I've never found or created a really good low carb fruit cake; most low carb sites aren't British and don't quite get it. Eg a 'Christmas cake' with pineapple and very pale crumb isn't traditional here.
But last year's was close. As I allow myself a few more carbs nowadays I added a little treacle.

  9. From a nutritional standpoint, I’ve eaten far too much butter this week. But from a self-care standpoint…

Ok y’know what? From a self-care standpoint, I’ve also eaten far too much butter this week.

    Let’s try again.

As a potential spokesperson for butter, I’ve probably eaten a qualifying amount of butter this week.

  10. It might be missing something…a gingerbread cat maybe, but with the difference in scale it would look like Kitten Kong and that’s not a look I’m going for (this year anyway).

  11. Finally got around to some baking. First mince pies of the year (not counting the ones I made in January with the last of Christmas past mincemeat).

A couple might have been eaten already.

  12. December's cocktail pie - Parsnip Flip Galette

Ango shortcrust, sherry and dried fruit chutney, maple-bourbon parsnips, toasted almonds

Something about The Aviary's Parsnip Flip stood out to me this month - festive, unexpected, and it already sorta sounds like a pie.

It's gonna make some good Christmassy lunches as we get towards the holidays!
