  2. Ever since my kid bought me a bamboo steamer for Xmas, I've been reading tons of recipes & watching scads of videos. I just wanted to make some authentic shrimp or pork buns. I finally gathered the courage to make pork buns today. Or tried to. The filling was fine, & even though I usually make some pretty great bread, the wrappers I made can only be described as steamed semi-breadlike school paste — in taste and substance. Definitely not light & fluffy.

    Made some #BakJupGai (#Cantonese for #PoachedChicken) and am making some #Jook (#Congee) with the poaching broth now.

    Will add shredded dark meat for the jook & serve the chopped chicken breast pieces over steamed rice with minced ginger/green onion sauce with the rest.

    The chicken cost 99 cents/# & the rice cost pennies for the amount used.

  5. I tried this recipe. I tell ya, beat chicken I have made. Simple ingredients, nothing fancy, yet lots of flavour. Best of all, super lazy, cook and leave method 😆

    Ps: I used a pressure cooker.

  11. I’ve basically turned into my grandmother. I have a ‘dried goods / umami box’. I know of no other more economical way to make the stocks and soups required of southern Chinese coastal cooking. Black beans, good quality dried mushrooms, dried anchovies and scallops. Central to every Cantonese and Chiu Chow kitchen. Our food does not taste the same without this stuff. (And is also what’s used by the best restaurants)

  12. Have you ever had a century egg? It's preserved in clay, salt, coal or wood ash, sometimes lye, for months. The shell is completely dissolved and the egg looks like this... it's kinda like a very aged cheese & egg flavor...     Thanks to Chinese Cooking Demystified I'm now sometimes deep fry my boiled eggs (aka tiger skin eggs). It's possible to use these eggs in other suitable dishes instead of meat, but most often I roll mine in a sauce made of 50% ketchup and 50% soy sauce. Delicious!
