CW: A really hot sauce!
Looking forward to trying this hot sauce. Never had one with blueberries before!

The green one in a jar was 800ml mash which I blended with 500ml of a cheaper basic white wine vinegar that has a lightly caramel/brandy/sweet note. This also had a tablespoon of white sugar to balance some green fruit bitterness, a teaspoon of citric acid, and ⅛ of a teaspoon of xantham gum for stability.
This will also sit a week before coarse straining and bottling.
It isn't very hot, but it has a very good "pickled" flavour and aroma.

I'm also making another #chillisauce — this one is based on the Big Black Mamma crop, and combines them with onion, garlic, and carrot — blended and fried for 5 mins with fresh toasted & ground coriander & fenugreek seed, then simmered with 500ml vinegar, blended roast red capsicum, and some citric acid and salt.
It is way too spicy I think, but it tastes beautiful. These chillies have such an excellent flavour (naga type). Beautiful pain. Not sure I want to "water" it down with passata.

This will keep me supplied for a while. Has a pretty mighty kick to it but nice taste too. 🔥 Scotch bonnet chillis with lime, pear and a few other odds and ends.
