  8. Made Goulash for these cold days. Extra spicy :ablobcatbongo:

    Goulash with beef and a little bacon. A standard recipe with caraway and majoram, onion, bell pepper, carrot, potato, fresh and canned tomato and of course chilis.
    I used for 1 kg 2.2lb meat fresh:
    2x 7-pot Barrackpore
    3 Scotch brain yellow
    1 tsp Cayenne powder and 2 tsp sweetpepper for some smokey aroma.
    All together about 3 liters. (~0.8 US gal, ~0,65 UK gal)

  10. My two window chilis.

    A Thai Birds Eye (left) and a Chiero Roxa. These have been growing since Ferbruary 2023 inside at an East facing window.
    The Thai is from seeds bought locally in Thailand and the Chiero Roxa are said to come from Brazil.

    They have been suffering from aphid infestation but they have lacewing larva patrolling their foliage and the aphids are almost gone. I topped the Chiero Roxa in April and have been rewarded with many peppers. I didn't top the Thai as it was very slow in the beginning and it's only now starting to fruit.

  11. I have been having a continued attack by aphids on my window sill chilis. I tried manually removing them but it was futile. Winged ones fly in and multiply quickly. Insecticidal soap was unsuccessful as my chilis didn't like that. After 2 weeks of that I finally accepted I need help for this in the form of the merciless special forces: Chrysoperla carnea larvae!

    Otherwise known as the Common Green Lacewing larva these brutal helpers will hunt and eat aphids, thrips, spidermites, whitefly and more.

    Here are three pictures of them. The second one shows one eating an aphid.

  13. Seed starting

    This is how I usually start my seeds especially if there are too few or rare ones.
    I wash all utensils well.
    I use 2-5 seeds depending on fertility and amount I have for each chili plant. I soak them for 1 day in distilled water or 1% Potassium Nitrate in an ice cube tray at room temperature. I cover that with plastic film/bag.
    The next day I place them in a plastic tray with an air tight lid to contain the moisture. I place the seeds on 4-5 layers of moist, not wet kitchen paper to maintain moisture. I also use a small 7W heat mat with thermostat and a thermometer with a sensor and keep it between 27 and 29°C (80-85°F). I place the tray in a waterbath to keep the temperature stable. I normally have high sprout rates >60% and mostly within 10 days, even with older seeds. (I've had good rates with 9 year old Ghost seeds.)

  14. I had some fun making chilpaste based on Nam Prik Pao but with yellow chilis. This is my method:

    Recipe
    2 sweet bell peppers chopped
    2 fresh Scotch Brains Yellow (heat:10+)
    5 cloves of fresh garlic
    3 tbsp fishsauce
    2 tbsp rice vinegar
    3 tbsp vegetable oil
    4 tbsp sugar
    ½ tsp salt

    :science: Roast the unpeeled garlic cloves and chopped onions without oil until just browning. Remove and set aside.
    Roast the chopped chilis the same way in the same pan.
    Add all ingredients to a blender or food processor. Pulse a few times or longer for a smoother texture.
    Add 1 tbsp vegetable oil to the pan and cook the blend for 10-15 until it thickens and darkens in color. Keep mixing to avoid burning.

    Makes about 250ml. Keeps for a couple of weeks in the fridge. It's good as a condiment, on toast or ingredient for other dishes.

  15. Hot Honey

    A fun way to spice up food like chicken wings or pizza.

    This is how I make hot honey.
    Use a good honey you already know and enjoy the flavour. I prefer a less flowery aroma so I usually use forest honey. I find this goes well with the flowery taste of some chilies increasing the complexity and type of food you could use it with.
    I also use habanero heat chilies but try with whatever you have. Use fewer hotter chilies rather than many mild ones. This keeps water content low.
    I wash and chop the chilies and remove the seeds. I add 1-2 habaneros to 500g honey and heat until the honey just starts to boil.
    Let it simmer (don't boil) for 8-10 min and then remove the chilies. Let it cool for 10 min and then pour back to the honey jar. Enjoy.

  16. Pimenta de Neyde
    An unusual chinense chili from Brasil with just under habanero heat levels. They stay purple even when ripe and are thus able to hide whether they are ripe or not! I estimated around 6-8 weeks after flower fertilization. I had these in a well it window but they only produced a small handful of fruit. I must try these again.

  18. This is my tiny grow space where the fun with growing chilis happens. A 80x80x160cm (31.5x31.5x63in) grow tent.
    I used to have just some plants in the windows growing. Only few of them grew well enough to produce more than a handful of fruit here in Germany. So I decided to try a small grow tent with an led light in my limited space. I didn't like the 'exotic' light very much but the 2 COB 80W LED light was just enough to keep my plants happy. I had some chills all year round and I could experiment and have fun with this hobby.

  19. Lemon Drop Chilis. One of my favourite. A Capsicum Baccatum chili with a tangy flavour and great colour. Great in a stir fry for a fresh flavor and in sweet and sour hotsauces. The bushy plants tolerate colder environments better and are heavy producers. They also have pretty flowers characteristic for baccatum .

  20. Jamaican Hot Chocolate. Slightly larger and hotter than Chocolate Habaneros, or so I'm told. I hope I can try the latter soon. Grown under the same conditions with the Reapers. These Jamaican Hot Chocolate chills had a slightly earthy flavour and I found using them for BBQ sauce or Chili Con Carne worked very well.
