Picked up this new old cheese this week, no real origin information except “Canada.”
Not as sweet as a British cheddar, this one definitely has more New England vibes. Decent cream melt in your month, very solid flavor. Nothing to object to. Nothing to be “wow, this has changed my life.” Just a solid, aged sharp-ish white cheddar.

Another widely-available cheddar from one of the best butter makers in the world.
It’s a super mild, a little wet, kinda just “eh, it’s fine” cheddar with hints of sour. Not a bad cheese, but maybe just stick it and a sandwich and don’t think twice about it.

Milton Creamery’s Prairie Breeze was the cheesemonger at Zupan’s “favorite cheddar,” and gotta say, they’re not wrong. Moist and crumbly, sweet with a hint of hoppy-ness. Nice mouth stickiness. Bright but complex. Recommended.

Feels like an extra hard cheddar, has an almost smoky flavor, though there’s no smoke in it, and has a Gouda like-finish that wasn’t great. My first reaction was briney, and not in a good way.
They release this one in January for St. Patrick’s day, but if you like Irish Cheddar I’d stick to one of Kerrygold’s standards.

One doesn’t simply expect their cheddar cheese to taste like provolone and that is Joe’s secret in this one.
Truth is, kinda liked it. Fruity and bright, like a stackable provolone, but not very cheddary.

Is it weird I never think of Trader Joe’s? I seem like I’d be a TJ kind of person, and admittedly I once was. Anyway picked up this cheddar there.
Apparently in New Zealand, sharp cheddar is another word for “practically Swiss.”
Not bad at all, but not very cheddary to me.

Real intense, kinda bitter moist cheddar. Great pair with fruit or on a cheese plate to add some depth, but not sure it’s a good “by itself” daily driver. A little musty. I’d buy again for a special occasion, maybe, but not gonna rush back out to the store to get more.

Rouge Creamery Hopyard Cheddar.
WOAH, this is a weird one. So it kinda tastes like bread-cheese?
They basically took hops and mixed them in milk and made a sorta soft-cheddar. I had a few bites and I don’t think it is really for me, but if you’re a hoppy IPA beer-head you might like it?
Don’t eat it with another cheese, it really is overpowering.
