Champagne wasn't always a celebration. Widowed at 27 in 19th century France, Barbe-Nicole Clicquot inherited the winery. Champagne back then was cloudy, filled with dead yeast. Her fix: she drilled holes into her kitchen table at 45 degrees and twisted the bottles daily, forcing the yeast into the neck. She called it riddling — the technique that made champagne clear.
