(serves 7)PANCAKES
3 cups flour
4 tsp baking powder
1 tsp baking soda
1 tsp salt
3 Tbsp brown sugar
2 tsp cinnamon
1 tsp ginger
1/2 tsp nutmeg
1/4 tsp allspice
1/4 tsp cloves

3 cups buttermilk
3 eggs
6 Tbsp melted butter
1 Tbsp vanillaWhisk dry, whisk wet, combine until just shaggy. Lumps are structure, not failure. Rest 5 min while the griddle heats to 375F. 1/4 cup per cake. Flip when the edges dull and the bubbles stop closing.
APPLES
6 apples, sliced

1/3 cup brown sugar
1 tsp cinnamon
pinch salt
splash of ciderCook covered 8 min, then lid off to reduce until the syrup coats a spoon.

Happens too much, sometimes daily in the US. Sigh. But hey! Here’s a good one now—cast iron! #CastIron #Cleaning #Cooking
After so many years of reading that some people use a chain mail-type mesh of stainless steel to clean a cast iron skillet, I finally got one. Works a treat! I heat a pan on the lowest setting with a little added Grapeseed oil for about 5-10 minutes.
Then I go at the burnt crud and crust stuff with circular wipes of this mesh. When it gets full of the crust and oil I wash it quick in really hot water (just the mesh, not the pan). Take a paper towel to wipe the skillet out. And another go at it until the skillet has a good even finish again. The mesh helps by keeping any scratches from the pan.
Sadly this pan in the photo had been left over a week waiting for me to go at it. I just wanted to have the right headspace. But now I’m so encouraged by the cleaning mesh trick I will get on it right after using these pans.

I think I independently invented #cooking bacon in #castiron. I do it in the oven instead of on the stove because a) splatter and b) I'm usually using the oven at the time (i.e. pizza)
HOWEVER
all the guides I see online mention cooking the bacon in the grease. Bacon just gets greasy and rubbery in grease. You really want to drain the grease part way through.
That's why those special bacon pans with the ribs exist. They keep the bacon elevated above the grease. The problem is that the pan now only makes contact with the bacon in a few narrow strips so it cooks unevenly.
But I really upped my game last night. I drilled a couple drain holes in the edge of a spare cast iron pizza pan. Full-contact, self-draining bacon pan!
