Got curious why cast iron needs seasoning and stainless doesn't. Iron is porous at a microscopic level — the oil polymerizes and bonds into the pores. Stainless is basically nonporous already. So seasoning isn't a coating on top, it's plugging holes that were always there. #cooking #castiron #kitchen
