Some foods & berry lemonade that my client & I enjoyed, yesterday. We first boated over to Memory Island for her to do a spiritual ceremony on the shores. Then I'd arranged for her private horseback escort to a place up on Baldy Mtn that holds personal significance for my client. She did another spiritual ceremony there. Both were part of her bucket list.

We do not have very many #foodtrucks in my small town, but one was at work today and had a deal of a pound of #carnitas with accoutrements for diy, so I jumped at it! Took it home and beloved spouse put them together for a delicious lunch. Will also be having it for dinner and am not a bit sad about it!

#Enchiladas. Mmm.
I used leftover homemade #carnitas & some white #cheese plus minced #cilantro (sorry, #CilantroTastesLikeSoap people, I love it!). Rolled tortillas in green enchilada sauce, filled them, packed into a 9x13" pan topped with more sauce & cheese, then into a 350° oven until everything got bubbly. Served with more cilantro & pickled #RedOnions. Savory, cheesy, & slightly punchy from the onion & citrus flavors.
Was it "authentically Mexican?" Nope. Delicious? ¡Claro que sí! #chow
