  16. Side note on the seasoning. A mistake I made in the past in seasoning pans was to leave on too much oil. I now apply oil then wipe it all off with a clean cloth (it becomes matte, not shiny). There is still a very thin layer left no matter how hard you wipe. This ensures structurally sound seasoning that won't chip or crack. I also wash between layers. A scrub pad for non-stick and plastic surfaces with dish soap is fine. #CarbonSteel #CastIron

    The copper colour is from the 5 layers of seasoning I did, heating the pan in the oven to just below the smoke point of the super thin layer of sunflower oil (415°F) for 45 minutes. It will blacken with use. My pizza slid right off, even the caramelized cheese.

    I did have a lighter MadeIn pan for a while but their handle design was just too awkward and I ended up donating it. This one is a bit lighter and bigger than my cast iron pan. #ADIML #CarbonSteel #Cooking
