    Yats is a cajun/creole chain based out of Indianapolis that many Hoosiers are familiar with. They offer a variety of étoufées, gumbo, red beans and rice, and jambalaya (although not as good as The Jambalaya Shoppe). Oh, and did I mention you get two pieces of French bread slathered in butter and herbs to go along with this deliciousness? “Oh, the bread”, they say. I like to call it my cajun/creole comfort food although I doubt any true Scotsman New Orleans folk would say that.

  14. Faldt over et meget fint website der havde en meget fin og detaljeret opskrift på #gumbo. Hovedet under armen fulgte jeg den til punkt og prikke, og endte hvad der mest af alt minder om en hidsig crossover imellem rigtig gumbo og meget, meget, meget tyk brun sovs.

    Opskriften snakkede om en #roux, som er #cajun ækvivalenten til kernen af en opbagt sovs. Det lyder jo meget fornuftigt, for at det ikke bliver en tynd suppe. Men jeg skulle nok ha' spotte de første tegn ved de 2 dl olie og 150 g mel.

    I retrospekt har det nok været tale om et AI-generet bullshit site, hvis primære formål er at høste trafik. Opskriften var tæt nok på noget der lød rigtigt, og jeg er lidt for meget amatør i et køkken til at spotte det.

    Be interesting to know if it’s just availability, or cost or style?

    Some of the nicest one-row so called #Cajun accordions have been custom built in #Louisiana over the years

    Not so, larger three-rows, or fully chromatic piano #accordion like Clifton Chénier played that made it possible to mix in blues and R&B to create #zydeco

    Early one-row 🪗 couldn’t play #blues easily so it got left out of most Black American music 🤷🏽

    One row diatonic #accordion can play in more than one key if the keys don’t require the full chromatic scale

    The player does become limited beyond a few keys, and has to be more and more skilled to hide the “gaps” in keys the instrument wasn’t built to play easily in
