I've been a fan of #Bulgur (parboiled wheat) for years. I make a salad with it almost every week.
For years I've been noticing the bin alphabetically next to it at the co-op... #Buckwheat Groats.
I remember having buckwheat flour pancakes in my youth, but never the groats. So I decided to try them...
I learned two things: 1) Groats are as close to "whole grain" as we generally eat. Basically seeds with the undigestable bits rubbed or ground off. (Bulgur is processed wheat groats.) 2) Not everything that looks like a grain is. Buckwheat is a pseudocereal, as is Quinoa.
They cook up like steel-cut oats, but easier to make in the microwave. I've found I like to eat them savory with salt or soy sauce, rather than sweetened.
