Beetroot borscht (locally known as botwinka), a spring soup, a Polish peasant borscht, cooked in broth, meat, or vegetable stock, made from young beetroot and leaves, with potatoes, and leavened with lemon juice or beetroot sourdough. Beetroot borscht is prepared in spring, when the beetroot leaves are soft and tender, and the root is still small. This is when the beetroot leaves have the most flavor and aroma.
