It’s mostly about The Nativity. Like most Villancicos its attribution is fuzzy at best but it’s often pinned to Catalonian composer Mateo Flecha the Elder in the early 1550s. It was popularized in the English speaking world by The Monkees with their cover (youtu.be/k-tgzMNSuvw?is=-lBxUp)

Villancicos are traditional Spanish language songs from Spain & The Iberian Peninsula and the areas that they colonized (Mexico, The Philippines, Morocco, South & Central America, etc.) that from their advent around the 15th century evolved from being bawdy songs with music about daily life written in the style of recent Medieval dance music to being more religious in nature. Many still enjoy popularity today
