Hier dans un bon #resto #libanais (Ishtar à Nice), j'ai pris un plat "falafels et aubergines frites".
Les #aubergines étaient absolument extra et inédites : pas grasses, grillées presque noircies sur les coins et arêtes des morceaux, et par contre la chair était presque aussi fondante qu'un caviar d'aubergine…!
J'ai essayé d'extorquer le secret au serveur, mais il m'a juste répété que c'était frit (alors que cela ressemble plus à une #cuisson au four)

Some more hasselback aubergine action, this time from Star Infinite Food - the recipe isn't listed on her website so I'll paste it here:
"HASSELBACK TOMATO-BUTTER EGGPLANT WITH BASIL & FETA! Guyssss this might be the best thing I have eaten in weeks!"
Eggplant:
1 medium eggplant
Salt
Olive oil
1/2 cup basil leaves
1/3-1/2 cup fetaFor the butter (you will not need all of this, but you do not want to have too little):
6 tbsp softened butter
6 tbsp tomato paste
1 tsp salt
1 tsp garlic powder
1/2 tsp pepperToppings:
Sunflower seeds
Feta
Chopped basil1️⃣Preheat the oven to 425.
2️⃣Make the butter. Add all ingredients to a small bowl and mix to make a paste. If it is not combining, heat in the microwave for 15 seconds.
3️⃣Place the eggplant on a cutting board with two chopsticks on either side of the eggplant halves and make thin slices throughout. Repeat for the second half.
4️⃣ Make the eggplant. Drizzle some olive oil on the bottom of an oven safe pan. Open the eggplant into a fan, add some salt, then add a smear of the butter to each layer. Next, add basil leaves throughout, every 3-4 layers. Repeat with the feta cheese. Place each half next to each other on the pan, then cover and bake for 35 minutes. Reduce the heat to 375 and cook another 20-25 minutes, until the eggplant is tender. This may vary depending on the thickness.
5️⃣Top with the basil, feta and sunflower seeds. -

"Boranis are vegetable salads – often made with leafy greens such as spinach, or with aubergine slices, as here – covered with a seasoned yoghurt sauce. They are loved from Turkey to Iran to Afghanistan, Pakistan and India. Chopped tomatoes or a tomato sauce may be added and that is what I have done. A wee before-and-after of roasted aubergines (and some lesser vegetables) adding homemade Za'atar spice mix.
It's cumin, coriander and sesame seeds which are toasted and then ground before adding thyme and sumac. Equal measures of everything depending how much you want to make and then a smidge of chilli flakes at the end.

Interesting concept from @simonhammann - the hasselback #aubergine! Much thicker slices than I remember for potatoes (so much less 'hassle' perhaps). Not sure how successful an experiment it was but it's definitely a fun idea and he said it tasted good
