Visited a friend and fortunately, she was making 'Sanpiau'.

It's popular as a Mizo dish (at least according to search results) but I have a feeling it has its origins in #Myanmar or SouthEast Asia. It's a rice porridge, where rice is boiled with pork, chicken, or any soup of your choice. You then serve it with the meat pieces, some dry crispy elements, coriander, onions, roasted sesame seeds, and oyster/soy/fish sauce. Light on the stomach, it's often enjoyed as an afternoon snack and considered 'comfort food' by some.

It's does take 'some' work to prepare a good one.
