There used to be a restaurant chain called The Ground Round, and in addition to holding our chess club meetings there in the 90's, they used to have an Apple Crisp dessert which was delicious. I think I have faithfully recreated it at home, and that makes me very happy.

Two apple cheddar crisps, one for the freezer. The 4 quarts of sliced apples that rested overnight were divided, grated cheese and the topping added and baked for an hour or so since the apples were cold.

Picked 28 lbs / 12.7 kg of Gravenstein apples this afternoon, quartered most of them for apple sauce, and peeled and sliced the rest for an apple crisp. Quartered apples are softened and cooling, sliced apples are bathed in some orange vitamin C juice and in the fridge. Took less than 3 hours with interruptions.

Cook the crisp, strain the softened apples, cook the sauce a little, and then can it in the morning when I can have the windows open.
