    It’s a problem that alt proteins don’t compete on a level playing field. The factory farming industry has stacked the deck. The goal however isn’t just to level the playing field, but to shift the advantage in the other direction.

    Compare it to renewable energy. Early investments in solar would just not have made money, but now it’s a thriving industry.

    #Fibroin (silk protein) is extracted from silk cocoon fibres: just a small amount of it gives food a softer, moister texture, and helps to bring out the flavour of other ingredients. (relevant part starts at 9:00, but it is worth watching the whole video, only 13 min long)

    Many people are happy and grateful to have #insects as part of a satisfying meal. I was surprised that some insects (e.g. palm weevil) are eaten for their high fat content (60%).

    Corporations have enough money of their own to invest and innovate to enter these markets, and they should, it's a great new business opportunity. Also, they could support #CultivatedFood approval/acceptance with their lobbying power.
