Learning today at Choco-Tec that the shells of almonds, hazelnuts and other tree nuts can be ground up into a flour and added to existing nut butters/nut flours/nut milks and bakery products. Approximately doubles yield of food per tree and reduces ingredient cost. Interesting.
Soaking helps to soften the almonds, making them easier to blend and increasing the nutritional availability of the milk.

I love that World Plant Milk Day is a thing.
I have a soy intolerance (which apparently is common for people with milk allergies?!), so I drink almond milk.
Oat milk is good, too, but it’s a bit too much to put oat milk on my morning oatmeal. Maybe I’ll try it again if I ever switch to a different breakfast staple.

I've recently been wondering if mediaeval almost milk was rather thicker than we might assume from our familiarity with modern nut milks. (I'm from a tahini-making culture, so you may see where I'm comng from.)
This might call for practical experimentation.
