Today I’m doing meal prep which includes chopping veggies for snacking. I’m oddly pleased with my decision to chop everything diagonally.

Today is food prep day.
In the past, I would never do food prep while on vacation. That’s changed because of my limited mobility and since my diet is vastly different and I could not survive on take out.
Chopped carrot, celery, and cucumber for easy dipping in hummus.

Portioned up grapes and raspberries.

Now cooking all the veggies for soup then will add chopped herbed chicken sausages once they’re ready.
